En perfekt stekt biff er utrolig godt, og slett ikke vanskelig å få til når man bruker en tommelfingerregel. Metoden snappet jeg opp en gang jeg så et matlagingsprogram på TV, jeg tror det var Lars Barmen som hadde det. Men siden har jeg sett at de fleste kokker bruker den samme metoden.

Begynn med å la kjøttet ligge ca. en time på kjøkkenbenken for å få romtemperatur – det skal gi en saftigere biff.  Da er biffen klar for steking. Jeg bruker en skikkelig varm jernpanne og en blanding av smør og olje til å steke i. Og så tørker jeg kjøttet godt med papir slik at det får en tørr overflate før jeg krydrer det og legger det i den varme pannen. Jeg steker biffen noen minutter på hver side, hvor lenge avhenger av biffens tykkelse. Når biffen har fått en fin stekeskorpe, kan varmen skrus litt ned slik at kjøttet får steke ferdig uten å bli brent. En perfekt stekt biff har ligget akkurat lenge nok i stekepannen. Clouet er derfor selvsagt å ta kjøttet av varmen i rette øyeblikk. Det er jo bare det at det ikke nødvendigvis er det samme for alle. Noen liker biffen nesten rå, andre vil ha den gjennomstekt mens de fleste vil ha den stekt et sted midt i mellom disse ytterpunktene.

For å finne ut om biffen er ferdig, er det altså tommelfingerregelen kommer til anvendelse. Du må kjenne på kjøttet med fingeren. Sammenlign hvordan biffen føles med hvordan den kjøttfulle delen av tommelen din kjennes ut. Når tommelen er slapt bøyd inn mot håndflaten vil tommelen være myk. Akkurat slik føles også en «rå» biff. Når tommelen er strukket kraftig ut, blir tommelen mye hardere. Slik kjennes en gjennomstekt biff ut. «Medium» stekt er altså et sted midt i mellom. Når biffen kjennes passe ut, må den tas av varmen og la den hvile litt. Denne metoden slår aldri feil. Lykke til!

Det er ikke bare biff som denne metoden kan brukes på – den fungerer på alle slags kjøtt og kyllingbryst. Til store kjøttstykker foretrekker jeg imidlerti å bruke steketermometer. Det synes jeg gir en bedre kontroll.
