Nå er tomatene på sitt beste, og da er det bare en ting å gjøre – fråtse. Her har jeg brukt både store og små til å lage en salat med tomat og aspargesbønner. Jeg ville helst ha brukt en blanding av gule og røde cherrytomater, men fikk bare tak i vanlige røde. Det ville jo sett enda festligere ut om det hadde vært forskjelligfargede tomater, men smaken var fortreffelig uansett.

Smaksmessig treffer denne salaten midt i blinken. Tomatene er herlig søte, dressingen er en fin kontrast med den gode saltsmaken fra ansjosen og friskheten fra vineddiken. Dessuten tilfører de fortsatt litt sprø aspargesbønnene litt tyggemotstand.

Ideen til denne salaten har jeg hentet fra det amerikanske magasinet Bon Appetit. Men i stedet for å bruke hele ansjosfileter som de hadde gjort, har jeg hakket opp filetene og hatt dem i dressingen i stedet. Ansjos er en ypperlig kilde til umami og gir en nydelig krydret litt ubestemmelig og ikke veldig «fiskete» smak. Så selv de som ikke liker fisk, kan godt like smaken fra denne lille rakkern, nå den er «skjult» i en dressing.

Er du fortsatt litt skeptisk til det med ansjos? I så fall kan du jo prøve denne salaten med tomat og fetaost i stedet.

Ingredienser

  • 30 cherrytomater
  • 6 klasetomater
  • 300 gr aspargesbønner
  • 6 ansjosfileter
  • 1 fedd hvitløk
  • 3 ss god olivenolje
  • 3 ss rødvinseddik
  • salt og pepper
  • 1 håndfull bladpersille

Fremgangsmåte

  • Rens bønnene og kok dem til de er møre, men pass på å ikke koke dem for lenge.
  • Hell av kokevannet og legg dem i iskaldt vann for å stanse kokeprosessen.
  • Skjær bønnene i to dersom de er veldig lange.
  • Vask tomatene og del cherrytomatene i to og skjær de andre i skiver.
  • Finhakk hvitløk og ansjos.
  • Pisk sammen olje, eddik, hvitløk og ansjos og smak til med salt og pepper.
  • Bland alle ingrediensene.

Server med godt brød ved siden av, og gjerne et glass avkjølt rosevin om det passer.
