Jeg har inntrykk av at peppermyntekonfekt er litt retro. Det virker som om mange som har vokst opp på 70- og 80-tallet var vant til at dette sto på julegodtmenyen. Det gjorde det ikke hjemme hos oss, men det var slett ikke et ukjent fenomen for meg allikevel. Jeg er veldig glad i After Eight og følgelig også glad i peppermyntekonfekt, som jo er nettopp en peppermyntekrem med sjokolade.

Peppermyntekonfekten er også veldig lett å lage. Den inneholder kun fire ingredienser som røres sammen, og så trilles ut til små kuler. Lett som en plett med andre ord.

Peppermynteolje og tragant fås kjøpt på apotek. Tragant smaker ingen ting, men gjør at deigen blir mer smidig og enkel å arbeide med. Det går også an å lage konfekten uten tragant, men da blir deigen altså mindre smidig.

Ingredienser

  • ca. 30 stk.
  • __
  • 1 egggehvite
  • 250-300 gr melis
  • 1 kn tragant
  • 5-10 dråper peppermynteolje

Fremgangsmåte

  • Pisk eggehviten og peppermynteoljen lett med en gaffel
  • Tilsett melis og tragant og rør det sammen til en deig.
  • Deigen skal være ganske fast.
  • Sett deigen kjølig i ca. 30 minutter.
  • Del deigen i ca. 30 like store biter og trill små kuler.
  • Pynt med en mokkabønne på hver kule.

Oppbevares kjølig i en lufttett boks. Disse kulene kan holde seg i hvert fall et par uker.

Tips

Du kan også pynte konfekten med sølvkuler eller dyppe dem i smeltet sjokolade.

Tja, så mye som du får plass til på tuppen av en vanlig bordkniv. Det er ikke mye som skal til. Jeg har et lite kryddermål på 1 ml, og kanskje halvparten av det.
