Pin

Pai med purre, squash og bacon er en deilig, sommerlig pai proppfull av grønnsaker og gode smaker. Paien er super å servere varm til middag med en salat ved siden av. Men jeg synes faktisk at den er minst like god neste dag og spiser den gjerne til lunsj, hvis det blir noen rester. Da varmer jeg den ikke opp, men lar den få romtemperatur før jeg spiser den.

Pai er i grunnen en veldig anvendelig rett. I tillegg til å passe både til middag og lunsj, er den super å ta med på piknik eller sette på et koldtbord. Og utover at paien er så anvendelig, så smaker den jo også så deilig. Dessuten er det noe de fleste liker. En sikker vinner med andre ord.

Det tar ikke superlang tid å lage denne paien, men om du er i tidsnød, kan du bruke butterdeig eller ferdig paideig fra butikken i stedet. Du kan også droppe å forsteke bunnen, men da vil den ikke bli like sprø som om du gjør det.

Ingredienser

  • 200 gr hvetemel
  • 125 gr smør
  • 2-3 ss kaldt vann
  • --
  • 2 purrer
  • 1 squash
  • 1 pk bacon
  • 3 egg
  • 2 dl fløte
  • 1/2 ts salt
  • nykvernet pepper
  • 2 ts frisk timian
  • 100 gr revet ost

Fremgangsmåte

  • Smuldre mel og smør og kna det sammen til en ball med det kalde vannet.
  • La deigen hvile i 30 minutter i kjøleskapet.
  • Forvarm ovnen til 200 grader.
  • Rens purrene og skjær dem i tynne ringer.
  • Del squashen i to på langs og skjær deretter i ca. 3 mm tykke halvmåner.
  • Skjær bacon i tynne strimler og stek til det er sprøtt.
  • Ta baconet ut, men behold litt av fettet til å steke purre og squashen i.
  • Rull paideigen ut mellom to lag med plastfolie, og legg deigen over i paiformen.
  • Prikk deigen med en gaffel.
  • Forstek paibunnen i 15 minutter.
  • Fyll paibunnen med grønnsaker, bacon og urter, og legg ost på toppen.
  • Pisk sammen egg og fløte og tilsett salt og pepper og hell fløteblandingen over fyllet.
  • Stek paien i 25-30 minutter.

Server paien varm eller rom-temperert med salat ved siden av. Vel bekomme.
