Når jeg skal lage en vegetarisk middag til vår kjøttfrie mandag, synes jeg det er greit å bruke egg. Det gir gode proteiner som metter godt. Andre gode proteinkilder er bønner, linser og ost. Dessverre er det slik at ikke magen til alle i familien har det så godt med belgfrukter, og da er i hvert fall egg et bra alternativ. Dersom man holder seg med en kjøttfri dag i uken er det neppe så viktig å tenke på det med proteiner for å oppnå et fullverdig næringsinnhold. Det blir sannsynligvis nok proteiner de andre dagene. Dessuten vil nok gevinsten ved å spise mer grønnsaker mer enn oppveie mangelen på kjøtt en dag.

Her kommer en deilig sommeromelett med nypoteter, spinat og paprika. Faktisk kan den bli enda mer sommerlig, eller vårlig dersom du erstatter spinaten med selvplukket brennesle. Brennesle høres ganske skummelt ut å spise, men når den kokes nøytraliseres det stoffet som brenner og den blir fin og god å spise. Bare pass på å ikke plukke langs trafikkerte veier og bruk gummihansker når du plukker – så er det bare å høste fra naturens spiskammers.

I tillegg til poteter og spinat har jeg brukt grillede paprikaer. Det kan man selvsagt lage selv. Og ingenting er så godt som det, men det er en litt tidkrevende prosess som i hvert fall ikke jeg har tid til på en vanlig mandag. Da er det greit med de man kan kjøpe ferdig på glass. De er riktig så gode de også.

Ingredienser

  • 8 egg
  • 1,5 dl melk
  • 1 ts salt
  • nykvernet pepper
  • 650 gr nypoteter
  • 250 gr fersk spinat eller brennesle
  • 1 liten løk
  • 2 fedd hvitløk
  • 1 ss olivenolje
  • 1 glass grillet paprika

Fremgangsmåte

  • Kok potetene nesten møre.
  • Skyll spinaten eller brenneslen godt og forvell den i et par minutter.
  • Ta den opp og klem ut så mye væske som du klarer med hendene, og finhakk.
  • Hakk løk og hvitløk og fres det i oljen til det har blitt blankt.
  • Pisk egg og melk sammen og tilsett salt og pepper, spinaten og løken.
  • Skjær potetene i biter og legg dem i en smurt ildfast form. Skjær paprikaen i biter og legg i formen sammen med potetene.
  • Hell over eggeblandingen og stek i ovnen i ca. 25-30 minutter. Steketiden avhenger av hvor stor form du bruker og dermed hvor tykk omeletten blir. Jeg brukte en form som er 20x30 cm. Omeletten er ferdig når den når den puffer seg fint opp, og det ikke er noe flytende væske når du stikker en gaffel i den.

Server gjerne med en tomatsalat ved siden av. Vel bekomme.
