Sitter du akkurat nå og planlegger 17. mai menyen? Da har jeg et godt tips – posjert laks med wasabisaus. På 17. mai blir jeg gjerne så sliten i bena og varm i stakken at når det kommer til middagslaging vil jeg helst ha det enkelt, men samtidig noe norsk og gjerne litt tradisjonelt uten å være kjedelig. Med dene lakseretten kan jeg krysse av alle boksene. Den er lett å lage, tradisjonell nok og har en liten vri som gjør den litt mer spennende.

Sausen og agurksalaten kan lages på forhånd og fisken tar bare 7-8 minutter å trekke, alt etter hvor tykke stykker det er. Så alt i alt kan denne middagen komme på bordet på den tiden det tar å koke nypoteter – 15-20 minutter, altså.

Ingredienser

  • 600 gr salmalaks
  • 3 l vann
  • 3 ss salt
  • 3 laurbærblad
  • 15 pepperkorn
  • 1/2 beger lettrømme
  • saften fra 1/2 sitron
  • 1 ts wasabi (eller mer om du vil)
  • salt og nykvernet pepper
  • 2 agurker
  • 1 dl vann
  • 1 ss 7 % klar eddik
  • 2 ts salt
  • 2 ts sukker
  • Nypoteter

Fremgangsmåte

  • Begynn med å lage agurksalaten. Bland sammen eddiklaken. Skjær opp agurken på langs med en ostehøvel slik at det blir lange fine strimler. Legg strimlene i bollen sammen med eddiklaken rør godt slik at all agurken får lake på seg. Sett til side, men rør av og til.
  • Sett på potetene.
  • Kok opp vann til fisken og tilsett salt, pepper og laurbærblad. Skjær fisken i pene serveringsstykker.
  • Når potetene snart er ferdige legges fisken forsiktig i det kokende vannet. Ta kasserollen av varmen og legg på et lokk. La fisken trekke i ca. 7 minutter, litt kortere om det er tynne stykker og litt lengre om de er tykke. Det er viktig at det ikke trekker for lenge for da blir fisken tørr.
  • Rør sammen rømme, sitronsaft og wasabi mens fisken trekkes.

Server med rikelig med gressløk og gjerne et glass hvitvin til. Vel bekomme og ha en flott nasjonaldag.
