På denne tiden av året er det lammekjøttdeig å få tak i. Da ligger den er ved siden av deigene fra storfe, svin og kylling. Jeg skulle gjerne sett det hele året, men inntil det er en realitet, får jeg kose meg med den mens jeg kan. Her har jeg laget lammekjøttboller i hot tomatsaus. Disse bollene er skikkelig gode. De er lette, proppfulle av smak og passer til så mangt. Jeg serverte dem til potetstappe, men de passer like godt til pasta eller ris.

Du kan også droppe tomatsausen helt og bruke disse bollene i supper eller gryter. Eller kanskje i pitabrød med litt tzatziki og grønnsaker ved siden av, og de er supre til tapas også. Du kan like gjerne lage dobbel porsjon når du først er i gang og fryse ned til siden, for som du skjønner er det mange måter å bruke disse små godebitene på.

Ingredienser

  • 400 gr lammekjøttdeig
  • 1 liten løk
  • 2 fedd hvitløk
  • 1/2 dl rasp
  • 1 dl melk
  • 1 ts salt
  • 1 egg
  • pepper
  • 2 ts tørket oregano
  • --
  • 1 boks knuste tomater
  • 1/2 glass tomatpure
  • 1 liten løk
  • 1 fedd hvitløk
  • 1 rød chili
  • 1 ts sukker
  • 1 ss tørket oregano
  • salt og pepper

Fremgangsmåte

  • Bløt raspen i melken.
  • Riv løken på den grove siden av rivjernet. Finhakk hvitløk.
  • Bland alle ingrediensene og kna deigen til en seig masse.
  • Form kjøttboller som er på størrelse med store klinkekuler.
  • Stek i olje til de er pent brune rundt hele.
  • Legg kjøttbollene over på et stekebrett og etterstek på 200 grader i 5 minutter.
  • Kok ut pannen med 1 dl vann og ta vare på dette til tomatsausen.
  • Finhakk løken og hvitløken og fres det i olje til det er blankt og mykt.
  • Tilsett tomatpuré og fres et par minutter til. Tilsett resten av ingrediensene til sausen, også stekesjyen fra pannen,  og la det småkoke i 5 minutter. Smak til sausen og kjenn om den trenger mer salt, pepper evt. litt sukker eller kanskje mer chili.
  • Ha kjøttbollene i sausen og la det hele trekke på lav varme under lokk i 15 minutter.

Server med potetmos, pasta eller ris og gjerne en grønn salat.
