I går kom den første snøen og innen kvelden var et faktum hadde det gått over i regn. Det var med andre ord ganske guffent vær og føre ute. Da derfor passet det ekstra godt med denne rustikke og varmende pastaretten. Spagetti med svartkål og bacon var rett og slett kjempegodt og helt på sin plass en dag som dette. Vel ikke bare på dager med guffent vær forresten, på alle dager faktisk. Den lett bitre kålen med en  nesten syrlig ettersmak kler veldig godt det salte baconet. Sammen med litt chili, hvitløk, aromasopp og en liten skvett fløte blir dette en særdeles vellykket kombinasjon.

Visste du forresten at vi er midt inne i svartkålsesongen nå. Den tåler nemlig frost og kan fortsatt stå ute på jordene, selv om kuldegradene har meldt sin ankomst. Dermed er svartkål og noen andre kålsorter en av de få tingene som fortsatt kan høstes i ennå et par måneder. Litt stilig å tenke på, eller hva.

Ingredienser

  • 200 gr svartkål
  • 150 gr bacon
  • 10 aromasopp
  • 1 rød chili
  • 2 fedd hvitløk
  • 1/2 dl vann, evt.
  • 1 dl fløte

Fremgangsmåte

  • Skjær baconet i strimler og soppen i skiver. Hakk svartkålen i mindre biter og finhakk chili og hvitløk.
  • Kok spagetti til den er al dente.  Lag sausen i mellomtiden.
  • Stek soppen i tørr panne til den slipper væske. Ta da soppen ut og sett til side.
  • Stek baconet til det er gyllent og sprøtt sammen med chilien. Ta baconet ut av pannen, men ikke hell av fettet.
  • Stek svartkål og hvitløk i baconfettet til svartkålen blir litt myk og faller sammen. Du kan evt. tilsette litt vann for å speed opp prosessen. La det da dampe til alt vannet er borte.
  • Ha oppi fløte og la det surre et par minutter.
  • Ta til side litt av kokevannet og hell resten av spagettivannet av.
  • Ha spagettien oppi sausen og bland godt. Tilsett evt. litt av kokevannet dersom det ser tørt ut.

Server rykende varm med rikelig parmesan høvlet over. Buon appetitto.
