I fjor bygde jeg med to urtekasser av pallekarmer. I disse har jeg en haug med urter og det er en stor fornøyelse å kunne stikke ut i hagen og hente inn friske urter til matlagingen. Nå er det ikke noe nytt at jeg har urter i hagen. Det har jeg hatt så lenge jeg har hatt hage, og enda lenger når jeg tenker meg om, for allerede da jeg bodde på Majorstuen og hadde to små blomsterkasser på balkongen var den ene avsatt til urter. Men nå altså. Nå har jeg fått meg et stort utvalg. Jeg har plantet følgende urter; gressløk, kruspersille, bredbladet persille, timian, oregano, rosmarin, estragon, salvie, basilikum, thaibasilikum, sitronverbena, peppermynte, mojitomynte, bjørnerot og lavendel. Urter er herlige, de dufter deilig og gir maten en herlig smak. Noen bruker jeg masse, andre bare til spesielle ting. Men ofte synes jeg det er herlig å blande mange, i urtesmør for eksempel.

Det er nettopp urtesmør som gir disse kyllinglårene en nydelig sommerlig vri. Jeg brukte timian, estragon, sitronverbena og gressløk, men her er det bare å blande og bruke det du har og liker. Bruk en type eller flere, men ikke vær gjerrig. Noen urter har en veldig dominerende smak, så vær obs på det. Salvie er en slik urt. Derfor brukte jeg bare et par blader fra den, mens jeg brukte mye estragon.

Skulle du ikke få brukt opp alt smøret, er det lurt å rulle det inn i litt plastfilm til en pølse og fryse med. Da har du urtesmør til en senere anledning også. Urtesmør er herlig å bruke til grillet kjøtt, bakte poteter, kokte grønnsaker og mye mer. Så det er lurt å ha en slik rull på lur i fryseren. Det hever smaken på det meste synes jeg.

Ingredienser

  • 4 kyllinglår med skinn
  • salt og pepper
  • 100 gr romtemperert smør
  • 1 stor neve urter (timian, estragon, salvie, sitronverbena, gressløk)
  • 1 fedd hvitløk
  • 1 ss sitronsaft

Fremgangsmåte

  • Sett ovnen på 180 grader.
  • Finhakk urtene og hvitløken og mos alt inn i smøret med en gaffel.
  • Løsne skinnet forsiktig fra kyllinglårene slik at det blir en lomme mellom skinnet og kyllingkjøttet, men ikke ta det av.
  • Dytt det meste av smøret inn i lommene slik at det dekker. Klem skinnet over smøret og legg lårene i et ildfast fat. Gni litt av smøret utenpå skinnet også og krydre med salt og pepper.
  • Stek kyllinglårene midt i ovnen i ca. 40 minutter. De er ferdige når det pipler ut klar væske når du stikker med en spiss kniv inn til benet.

Server gjerne med ovnsbakte poteter og tomatsalat.
