Koldskål er en tradisjonell dansk sommerdessert. Den er laget på et blunk av melk, egg og sukker og er herlig forfriskende i varmen. Koldskål har en perfekt balanse mellom syrlig og søtt. For meg er dette en kjærkommen avveksling fra is eller fløte som tilbehør til de deilige, søte, norske jordbærene. Danskene serverer denne desserten med noen små, søte kjeks som heter kammerjunkere. De knuses og drysses over sammen med friske jordbær.

I stedet for kammerjunkere går det fint å bruke kavringer eller digestivekjeks. Vel, egentlig all slags kjeks kan vel brukes. Poenget er at de skal gi litt tyggemotstand og krønsj.  Søte bær eller frukt er prikken over i’en. Tradisjonelt er det nok helst jordbær som brukes, men andre bær og frukt går også fint – bringebær, bjørnebær, solbær eller kanskje litt opprkåret frukt som plommer, moreller eller fersken.

Det er en superenkel dessert som i Danmark helst lages med kjærnemelk. Det får vi ikke tak i her, derfor har jeg brukt kulturmelk. Det synes jeg ga et supert resultat.

Har du lyst på flere desserter i sommervarmen, kan du jo også prøve kald, krydret rabarbrasuppe, eller kanskje rett og slett en ispinne med mango og appelsinsmak.

  • 1 ts vaniljesukker
  • 1/2 sitron, saften
  • 1 l kulturmelk
  • søte kjeks

Fremgangsmåte

  • Pisk egg, sukker og vaniljesukker til det blir fluffy og lyst.
  • Rør inn sitronsaften.
  • Hell i kulturmelken og bland godt.
  • Sett i kjøleskapet noen timer så det blir helt kaldt.

Server i porsjonsskåler med knuste kjeks/kavring strødd over sammen med friske bær.
