Hel stekt blomkål gikk som en farsott i fjor sommer. Jeg fikk ikke prøvd det da, men forsøker meg nå i stedet. Blomkål er skikkelig sommermat for meg, og her kommer en oppskrift som smaker skikkelig av både sommer og Italia. Retten passer ypperlig som en kjøttfri middag sammen med en krydret tomat og kikertsaus står den helt utmerket på egne ben. Den er også utmerket som tilbehør til for eksempel stekt eller grillet fisk.

Her får blomkålen følge av brunt smør, sitron, salvie og kapers. Dette er typiske smaker i det italienske kjøkkenet. Brunet smør med salvie er en av mine favorittkombinasjoner og passer ypperlig til den milde blomkålen. Dette er en rett som i grunnen er temmelig enkel å lage. Den tar riktignok ganske lang tid, men krever ikke mye innsats av kokken. Gni den inn med olje og smør og la den godgjøre det i ovnen leeeenge. Det gir en sprø skorpe og et mykt indre. Den krydrede tomat og kikertsausen gir også en spennende kontrast.

Ingredienser

  • 2 store blomkålhoder
  • 100 gr smør
  • rikelig olivenolje
  • salt
  • 1 liten løk
  • 2 fedd hvitløk
  • 1 boks knuste tomater
  • 1 boks kikerter
  • 1 ts chiliflak
  • 1 ts oregano
  • sukker, salt og pepper
  • 150 gr smør
  • 0,5 dl kapers
  • saften fra 1 sitron
  • 20 blader salvie

Fremgangsmåte

  • Rens blomkålen, men la gjerne noen av de minste bladene sitte igjen - de smaker godt.
  • Skjær av stilkene slik at blomkålhodene står stødig. Skjær et kryss opp i resten av blomkålstilkene.
  • Gni blomkålen inn med smøret og dryss over salt.
  • Sett i ovnen på 200 grader. Stek blomkålen i ca. 1,5 timer.
  • Etter 20 minutter hell over rikelig med olivenolje.
  • Øs over olje/smørblanding av og til.
  • Blomkålen skal bli pent brun på utsiden og helt mør inni.
  • Mens blomkålen stekes, kan resten gjøres klart.
  • Finhakk løk og hvitløk og fres det i litt olivenolje.
  • Ha oppi tomatene og la det småkoke.
  • Smak til med krydder, salt, sukker og pepper.
  • Tilsett kikertene og la det småkoke i minst 15 minutter.
  • Smelt smøret og la det småkoke til det har fått en nøttebrun farge.
  • Tilsett sitron, salvie og kapers.
  • Hell sausen over blomkålhodene.
