September startet med masse regn og vind, så det er ingen tvil om at høsten er her. Når regnet pøser ned ute, er det ekstra deilig å kose seg inne med en varm suppe. Jeg elsker supper, og en av de tingene som er så bra med suppe er at det meste kan brukes. «Man tager hva man haver»-prinsippet er veldig sant når det gjelder supper. Nesten alt kan brukes – kjøtt, fisk, grønnsaker, frukt, restemat… Det er bare fantasien som setter grenser. Jeg liker å eksperimentere med nye smakskombinasjoner, og i dag var det altså gulrøtter og røde linser. Nå er det høysesong for gulrøtter og de er ekstra søte akkurat nå. Linsene gjør at suppen blir litt mer mettende. Suppen har jeg krydret med hvitløk, spisskummen og ingefær. Det er krydder som gir en varm følelse. Og hadde det ikke vært for at Lillemor er særdeles lite begeistret for chili, ville jeg nok ha tilsatt en chili også. Det ville garantert blitt bra. Så liker du sterk mat, vil jeg anbefale å tilsette litt chili også.

Ingredienser

  • 1 liten løk
  • 2 fedd hvitløk
  • 1 ts spisskummen
  • 1 ss revet ingefær
  • 2 ss olivenolje
  • 6 store gulrøtter
  • 1,5 dl tørre røde linser
  • 1,5 l grønnsaksbuljong
  • 2-3 ss sitronsaft
  • --
  • 200 gr fetaost
  • koriander til servering

Fremgangsmåte

  • Finhakk løk og hvitløk. Varm opp oljen i en stor gryte. Tilsett løk, hvitløk, ingefær og spisskummen. Fres i et par minutter til løken er blitt blank og myk.
  • Skyll linsene og ha dem oppi gryta sammen med grønnsaksbuljongen.
  • Skjær gulrøttene i små biter og ha dem oppi suppen. La det småkoke i 15-20 minutter til gulrøttene er møre.
  • Mos alt med stavmixer til det blir glatt.
  • Smak til med sitronsaft om du synes suppen trenger å friskes litt opp.
  • Mos fetaosten med en gaffel og ha det i en bolle ved siden av slik at alle kan forsyne seg med osten.

Server suppen rykende varm med fetaost oppi og et dryss av koriander. Godt brød eller rundstykker smaker også godt ved siden av. Vel bekomme.
