En gang i uken lager jeg lunsj/middag for Kirkens Bymisjon. Som regel vet jeg ikke hva som venter meg av råvarer når jeg kommer dit, så det gjelder å finne på noe på sparket med det som er. Sist jeg kom var det en masse gulrøtter i kjøleskapet. Og siden det var et litt guffent vær ute, bestemte jeg meg for å lage en suppe. I krydderhyllen fant jeg et glass med karri, og dermed ble det gulrotsuppe med karri. Resultatet ble en skikkelig deilig høstsuppe med masse smak og et akkurat passe kikk. Sammen med ferskt brød med smør på og en frisk salat ved siden av ble det et godt måltid.

Porsjonen jeg lagde der var mye større enn den oppskriften du finner nedenfor. Her har jeg forminsket oppskriften slik at den passer for en familie på 4.

Det er også en oppskrift på gulrotsuppe med linser her inne. Fordi den også inneholder linser, er den litt mer mettende enn denne varianten med karri.

Ingredienser

  • 6-8 store gulrøtter
  • 2 ss olivenolje
  • 1 gul løk
  • 2 fedd hvitløk
  • 2 ts karri
  • 1 l vann
  • 2 terninger med hønsebuljong
  • 1 boks kokosmelk
  • 1/2 ts shriracha
  • 1 ts fiskesaus
  • saften av 1 lime

Fremgangsmåte

  • Sett ovnen på 200 grader.
  • Rens og skjær gulrøttene i biter og bak i ovnen til de begynner å ta farge og har blitt litt myke. Det tar 25-30 minutter.
  • Hakk løk og hvitløk i biter og fres i oljen til de blir myke, men ikke har tatt farge.
  • Tilsett karripulveret og la det frese med et par minutter.
  • Ha oppi gulrøttene og vann og buljongterninger og la det småkoke til gulrøttene er helt myke.
  • Kjør suppen helt jevn med en stavmixer eller i en blender.
  • Hell oppi kokosmelken og smak til med shriracha, fiskesaus og likesaft.
  • Synes du suppen bli litt vel tyktflytende, kan du tilsette litt vann.
  • La det få et oppkok.

Server rykende varm med litt rømme oppi og dryss gjerne noen chiliflak over om du liker suppen hot.
