Sommeren nærmer seg. Været er varmt og hagen irrgrønn. Da er det lite fristende å stå inne på kjøkkenet mer enn nødvendig. Når solen skinner og temperaturen er brukbar, liker jeg å legge noe på grillen og spise ute (eller inne om det blåser for mye, slik det gjorde i dag). For det er en misforståelse at man bare kan grille når det er perfekt sommervær. Det går alltids an å gå inn for å spise.

Grilling er gøy og ikke er det spor vanskelig heller. Clouet er å styre varmen slik at maten ikke blir brent. Den enkleste måten å gjøre det på, er å bruke indirekte varme.  Det får du til ved å ikke legge grillkull i hele grillen, eller ved å ikke tenne alle blussene i gassgrillen. Disse kyllinglårene får deilig sprøtt skinn og blir saftige inni på en liten halvtime. Men grilltiden avhenger selvsagt av hvor store kyllinglårene er. De jeg lagde i dag var ganske små, så har du noen deilig, lubne fra Stange eller Holte gård, må du nok regne med litt lengre tid på grillen.

Aubergineskivene, som er tilbehør her, blir deilig krydret med ansjos, basilikum og parmesan. Noen ansjostyper er veldig salte, så smak på en filet før du går i gang. Er de veldig salte, er det et godt tips å legge dem i melk et par timer. Da trekkes saltet ut og de får en mildere smak. Dessuten, ikke bruk sånne ansjosfileter som ligger i små hermetikkbokser ved siden av eggene i butikken, men velg noen som ligger i olje på glass. De smaker mye bedre.

Ingredienser

  • 4 kyllinglår
  • 1 ts paprikapulver
  • 1 ts hot chilipulver
  • 1 ts hvitløksalt
  • 1 ts nykvernet pepper
  • 1/2 ts salt
  • olje
  • --
  • 2 paprikaer
  • --
  • 1 aubergine
  • 8 ansjosfileter
  • 8 basilikumblader
  • 8 skiver parmesan
  • olje til pensling

Fremgangsmåte

  • Begynn med å gjøre i stand auberginen.
  • Skjær den i 6-7 mm tykke skiver , ialt 16 skiver, og strø på salt.
  • La aubergineskivene ligge i ca.  1/2 time for å trekke ut bitterstoffene. Skyll godt og klapp auberginen tørr.
  • Legg 1 basilikum blad, 1 ansjosfilet og 1 skive parmesan på halvparten av skivene. Legg en skive på toppen, og fest med cocktailpinner.  Pensle med litt olivenolje.
  • Skjær paprikaen i biter.
  • Bland sammen krydderet og gni kyllingen først med olje og deretter med krydderblandingen.
  • Legg kyllinglårene på grillen med direkte varme. Grill dem et par minutter på hver side til de får fin farge.
  • Flytt dem deretter over til indirekte varme og la dem steke videre i ca. 20 minutter. Sjekk om de er ferdige ved å stikke en spiss kniv inn i leddet. Kommer det ut klar saft er kyllingen ferdig.
  • Når det er ca. 5 minutter igjen legges grønnsakene på grillen. Snu auberginene etter et par minutter.

Server med salat og poteter, ris eller godt brød. Vel bekomme.
