Da vi pusset opp kjøkkenet vårt fikk vi ny ovn med pizzastein. Og det gav pizzaene våre et skikkelig løft. Ikke at det var noe galt med de pizzaene vi brukte å lage før, men nå blir de mer som italienske pizzaer med skikkelig sprø bunn. Den høye temperaturen i ovnen kombinert med sterk undervarme fra steinen gir skikkelig spør bunn.  Pizzasteinen er ikke så stor, så det blir porsjonspizzaer. Og i grunnen er det helt greit, for da kan alle få sin pizza akkurat som de ønsker seg. Her er en ordentlig voksen variant med blåmuggost.

Denne pizzaen er altså bakt på pizzastein, men har du ikke det går det fint å lage den i vanlig ovn også, eller hvorfor ikke prøve den på grillen. Gjør da som følger. Lag deigen som vanlig. Sett grillen på max. Kjevle ut tynne leiver som du smører lett med olivenolje på den ene siden. Legg pizzaen på grillen med den oljede siden ned. Stek i 2 minutter under lokk. Ta pizzaen ut og smør den andre siden med olje. Legg på fyll på den siden som er stekt. Legg pizzaen tilbake på grillen og sett på lokket. Grill i 4-5 minutter. Da skal pizzaen være sprøstekt og osten ha smeltet fint.

Inntil nylig har jeg stort sett alltid brukt sort pepper, og tenkt at de andre fargene mest gir variasjon i det estetiske uttrykket mer enn i smak. Men nå har jeg oppdaget at jeg har tatt feil. Rød, grønn, sort og hvit pepper smaker forskjellig og passer dermed til forskjellige ting. I denne helgen har jeg funnet ut at grønn pepper og blåmuggost er en flott kombinasjon.

Ingredienser

  • 5 dl finbakstmel
  • 25 gr gjær
  • 2 dl vann
  • 1/2 ts salt
  • 4 ss olivenolje
  • --
  • 2 ss creme fraiche
  • 2 ss blå castello
  • 2 ss pinjekjerner
  • 3 skiver spekeskinke
  • 1/2 mozzarella
  • 1 dl revet Jarlsberg
  • 2 ts knust grønn pepper
  • --
  • ruccola til servering

Fremgangsmåte

Oppskriften gir 4 porsjonspizzaer.

  • Varm opp vannet til 37 garder. Smuldre gjæren og rør den ut i vannet. Ha melet og saltet i en bolle og bland inn vannet og oljen.
  • Elt godt. Dersom du bruker kjøkkenmaskin kan den godt gå i 10-15 minutter. Elter du for hånd kan du holde på så lenge du orker. Sett deigen et lunt sted og la den heve til dobbel størrelse.
  • Del deigen i fire emner og kjevle ut tynne leiver.
  • Smør creme fraiche på leiven. Riv skinken i biter, del blå castello i druestore biter og skjær mozarellaen i skiver. Fordel resten av fyllet jevnt utover pizzaen.
  • I vår ovn er steketiden 4-5 minutter på 300 grader. I vanlig ovn kanskje 15 minutter.

Dryss over ruccola salat og server, gjerne med et glass god italiensk rødvin ved siden av. Buon appetito
