I påvente av Italiaferien senere i sommer fortsetter jeg å lage italiensk mat hjemme fordi jeg gleder meg så veldig til ferie i Italia. Italia er et herlig land på mange måter, og ikke minst matmessig. Jeg kan sikkert holde på i timevis å snakke om de fantastiske råvarene der. Tomater som er så søte som bare det, fordi de har fått henge i herlig solskinn til de er helt modne og deretter fraktet til nærmeste butikk. og så er det alle variantene av tomater. De er store og små, runde og ovale eller formet som små eller store gresskar. De er gule, oransje, røde eller grønne, og alle smaker de herlig.

Ja, som du skjønner kan jeg bare fortsette og fortsette med råvare etter råvare, men det herligste av alt er måten maten tilberedes på – helt uten fiksfakserier. Det er gulrot, selleri og løk som skjæres i små terninger og freses i olivenolje i 15-30 minutter. Jeg må innrømme at det som oftest blir 15. Dette er basisen for hele sausen. Det er når det kommer til stykke basis for mange andre italienske retter også, men nå er det altså bolognese som gjelder. Resten av ingrediensene tilsettes i tur og orden og så skal sausen koke lenge igjen. Så lang tid som du har til rådighet. Etter dette har du en supergod bolognese som kan brukes til spagetti, lasagne, som fyll i pannekaker eller som her blandet med pasta og gratinert i ovnen. Med smeltet ost på toppen blir det en aldeles nydelig rett.

Ingredienser

  • 250 gr tørr fullkornspenne
  • 1 gulrot
  • 1 stilk stangselleri
  • 1/2 løk
  • 1 ss olje til steking
  • 400 gr karbonadedeig
  • 1/2 glass tomatpure
  • 1 dl vann
  • 1 dl rødvin
  • 1 boks knuste tomater
  • salt og pepper
  • ferske urter (oregano, timian, persille, basilikum)
  • 1 mozzarella
  • litt revet gulost

Fremgangsmåte

  • Forvarm oven til 225 grader.
  • Kok pastaen etter anvisningen på pakken. Hell av vannet og sett til side.
  • Skjær gulrot, stangselleri og løk i små terninger og fres det i olje i en gryte i ca 15 minutter.
  • Når grønnsakene har blitt myke tilsettes karbonadedeigen. Stek karbonadedeigen til den har fått fin brun farge.
  • Tilsett tomatpure og la alt surre et par minutter. Ha vann, vin og tomatene i gryten og rør godt. Smak til med salt og pepper og la det koke i 10-15 minutter.
  • Finhakk urtene og rør inn i kjøttsausen sammen med pastaen. Hell alt over i en ovnsfast form og fordel osten over. Stek i 15 minutter. Server straks med en frisk salat ved siden av.
