Det er veldig mange gode grunner til å like sommeren. For meg er en av de viktigste grunnene det store utvalget av nye, friske grønnsaker. Jeg simpelthen elsker å gå i butikken og fråtse i ny kål, nypoteter, spede purrer, tomater som faktisk smaker tomater og så blomkål da, bare for å nevne noen. Og ofte er det ikke mye som skal til for at disse struttende grønnsakene blir til deilige måltider. Som blomkålen for eksempel, litt ost, hvit saus, en håndfull smakssterke urter og litt spekeskinke. Vipps så har jeg gratinert blomkål med urtesaus. Over strør jeg litt spekeskinke som jeg har stekt for at den skal bli sprø. Så godt, og så enkelt.

Til urtene i sausen brukte jeg en blanding av persille, gressløk og estragon. Men her er det bare å bruke den eller de urtene du har eller får tak i og liker. Jeg liker godt å blande forskjellige, men det går like fint å bra bruke en type. Her er det med andre ord bare fantasien og tilgangen som setter grenser.

Jeg var så heldig å finne en liten skalk med spekeskinke i butikken til en særdeles gunstig pris. Denne skar jeg i tynne strimler/biter som jeg stekte for å gjøre skinken litt sprø. Men igjen, her er det rom for improvisasjon. Ønsker du en kjøttfri variant, bare dropper du skinken. Har du litt fenalår eller noe annet kjøtt går det meste her.

Ingredienser

  • 2 store blomkålhoder
  • 50 gr smør
  • 3 ss hvetemel
  • 5 dl lettmelk
  • 1/2 ts salt
  • nykvernet pepper
  • 2 dl hakkede urter
  • 200 gr revet Jarlsberg

Fremgangsmåte

  • Del blomkålhodene i buketter, og kok dem knapt møre i lettsaltet vann.
  • Hell av vannet og la blomkålen renne godt av seg.
  • Samtidig lages hvit saus ved å smelte smøret og røre inn melet. Spe med melken og rør så det blir en glatt saus. Tilsett salt og smak til med pepper og muskat.
  • Kok i 5 minutter. Ha i halvparten av osten og alle urtene.
  • Legg blomkålen i et smurt ildfast fat.
  • Hell over ostesausen og dryss resten av osten på toppen.
  • Stek i ovnen på 220 grader i ca. 20 minutter, eller til sausen har blitt pent brun på toppen.
  • Mens blomkålen er i ovnen, skjær spekeskinken i tynne strimler og stek disse i litt olivenolje til de er blitt sprø. La dem dryppe av seg på et kjøkkenpapir og dryss oppå når blomkålen er ferdig.

Server med kokte nypoteter og en frisk salat ved siden av.
