Denne oppskriften er fra Eyvind Hellstrøm sin kokebok «Enkelt og perfekt». I denne boken er det veldig mange gode oppskrifter. Selv om denne boken heter enkelt og perfekt krever retten litt jobbing, men resultatet blir vel verdt strevet. And med mango og vårløk er en utrolig raffinert rett som vil kunne imponere de fleste.

Andekjøttet er deilig mørt og nokså fett, så det står seg godt på en litt syrlig saus og friskheten i vårløkene. I oppskriften står det at brystene skal stekes i panne. Dersom jeg har mange gjester ville jeg nok steke dem ferdig i ovnen ved lav varme for å være sikker på at alle blir akkurat riktig stekt.

I oppskriften står det at det skal være andekraft i sausen. Det har jeg aldri, men jeg bruker andebuljong i stedet. Det går helt fint. Eller så foreslår Hellstrøm at man etter å ha stekt andebrystene og helt av fettet kan koke ut pannen med vann, soyasaus og worcestershire. Det har jeg ikke prøvd, men det går sikkert utmerket det også.

Ingredienser

  • 2-3 andebryst
  • 2 godt modne mangoer
  • 6 gr frisk ingefær
  • 1 lime
  • 1 ss sukker
  • 20 gram hvitvinseddik
  • 1 dl hvitvin
  • 1 dl andekraft
  • 1 bunt tynne vårløk
  • 2 ss honning
  • 1 ts finhakket chili
  • solsikkeolje
  • salt og pepper

Fremgangsmåte

  • Skjær rutemøntser på fettsiden av andebrystene og gni dem med godt med salt og pepper.
  • Stek andebrystene på middels varme med fettsiden ned i ca. 10 minutter.
  • Snu dem deretter og stek ytterligere et par minutter.
  • Øs stekesy over brystene noen  ganger.
  • Ta brystene av varmen og la dem hvile mens du lager i stand sausen.
  • Del mangoene i to. Den ene skal brukes til sausen, og den andre sammen med anden.
  • Ta ut steinen og skjær i biter. Ikke lag for små biter, skjær f.eks hver halve i 9 biter.
  • Smelt sukkeret i en liten kasserolle til det har blitt til lys karamell.
  • Tilsett eddiken og kok det nesten helt inn. Tilsett så vinen og kok igjen nesten helt inn. Tilsett andekraften og ingefæren og la det koke inn litt.
  • Ha bitene fra den ene mangoen i sausen og kjør det til en jevn masse med en stavmixer. Eyvind Hellstrøm anbefaler å sile sausen, og det kan man selvsagt gjøre, men når det kommer til dette punktet har jeg ikke mer tålmodighet så det dropper jeg. Smak sausen til med limesaft, salt og pepper. Tilsett evt. litt vann dersom sausen er for tykk.
  • Kutt vårløken i 4-5 cm lange stykker. Stek vårløken og mangoen i litt av andefettet.
  • Del hvert andebryst i to på langs og deretter i tre triangler.
  • Smelt honningen i en stekepanne og tilsett chilien.
  • Legg andebitene i honningen og glaser dem på begge sider.
  • Legg litt saus på hver tallerken og deretter mango og vårløk og fordel til slutt andebitene.
