Første gang jeg smakte ceviche var jeg  og Husbond på ryggsekkferie i Peru. Etter mye kummelige forhold kom vi til Lima, og en av mine forretningsforbindelser hadde ordnet et supert hotell og inviterte oss på en bedre lunch. Restauranten var en av de hotte i byen med en fantastisk utsikt ut over Stillehavet. Innerst i lokalet var det et band som spilte dansemusikk, men dette var milelangt fra polske danseband på danskebåten. Dette var skikkelig autentisk latinamerikansk fyrverkeri. Litt rart til lunch tenkte jeg, men la gå. Det spennende var at folk langt over discoalderen kastet seg ut på dansegulvet mellom rettene. Dessuten hadde alle som en, fra tre til sytti, hoftebevegelser som ville få en selskapsdanser på elitenivå her hjemme til å rødme av misunnelse. Ikke forstår jeg at det er mulig.

Dette skjedde for snart 15 år siden. Jeg husker dansingen, men ikke så mye av maten unntatt forretten som altså var ceviche. Rå fisk var ikke like vanlig da som nå. Riktignok var ikke sushi et fremmedord, men der stoppet det. Og så fikk vi en flott kreasjon på tallerkenen med fisk og skalldyr som tilsynelatende var kokt, men som ikke var det. Det var rå fisk og syre fra lime som sørget for at fisken hadde et litt kokt preg.

Retten er både hot og syrlig, men allikevel kommer den fine fiskesmaken godt frem, synes jeg. Dette er en enkel og fin sommerforrett som må foreberedes en time eller to før den skal spises. Og akkurat det er jo ganske praktisk. Oppskriften er til en forret for fire personer. Retten kan også med hell serveres i små porsjoner på tortillachips som en liten tiltygg til en velkomstdrink, og da rekker det nok til dobbelt så mange.

Ingredienser

  • 400 gr Salmalaks
  • 5 lime
  • 4 ss god olivenolje
  • 3 vårløk
  • 1 rød chili
  • koriander
  • pepper og salt

Fremgangsmåte

  • Skjær laksen i små terninger. Ca 1/2 x 1/2 cm synes jeg er passe.
  • Skjær vårløken i tynne ringer og finhakk chilien.
  • Press saften ut av  limene.
  • Hell limen og olivenoljen over fisken og sett den kaldt i minst en time.
  • Før servering blandes vårløk, chili og koriander inn i fisken.
  • Smak til med salt og pepper.

Anrett på salatblader og server gjerne med avkjølt hvitvin, eller en iskald øl.
