Påskeferie, for et herlig ord. Jeg skal jobbe, men det er helt greit. Studenten har kommet hjem og vi skal kose oss sammen på kveldene med gode middager og fine samtaler. Så da er det jo verdt å bruke litt ekstra tid på å lage noe godt å spise.

Denne uken starter vi med melanzane alla parmigiana. Det er en herlig rett med aubergine i nydelig tomatsaus og masse deilig ost. På tirsdager har vi ofte fisk og denne uken er intet unntak. En hel ørretside bakt i ovnen med grønnsaker og poteter. Alt på ett brett. Smaksrikt og ganske enkelt.  Spaghetti alla puttanesca er en deilig italiensk klassiker som er full av umamismaker fra tomat, oliven, ansjos og kapers. Dette er også mat som er lett å ta med seg på fjellet selv om man ønsker å reise lett.

På torsdagen følger jeg opp med en litt mer tidkrevende rett med indiske røtter. Chicken korma er herlig krydret uten å være for spicy, så den skulle falle i smak hos de fleste. Nå begynner det å komme europeiske asparges i butikken og det smaker så uendelig mye bedre enn den som har reist halve verden rundt. Det feirer jeg med en skikkelig god risotto med grønne asparges og reker. På påskeaften blir det selvsagt lammestek. Selv synes jeg det er mye enklere å lage en surret stek, men et helt lammelår er selvsagt imponerende å sette på bordet. Blir det rester er det supert å servere dem neste dag sammen med hummus og resten (eller nye) av grønnsakene.
