Jeg er veldig glad i thai-inspirert mat. Det er særlig den fine balansen mellom søtt, salt, surt og sterkt som er til stede i all god thaimat som gjør at dette er mat som jeg tror jeg kunne spist nesten hver dag uten å bli lei. Bare tanken på lime, koriander, sitrongress, galang-rot og chili får tennene mine til å løpe i vann. Dessuten føles maten frisk og lett og innholder mye grønnsaker. Alt det er disse Thaimarinerte grønnsakene et eksempel på.

Oppskriften på thaimarinerte grønnsaker har jeg hentet i Bent Stiansens «Stiansen til hverdags». Den er kjempegod som den står der, men dette er definitivt en oppskrift som kan tilpasses innholdet i kjøleskapet til en hver tid. Poenget er å bruke nokså harde grønnsaker som kan spises rå. I tillegg til de som er foreslått i oppskriften, er jeg sikker på at blomkål, stangselleri, fenikkel, sukkererter, reddiker, kålrot, asparges, rødkål og mye annet også er godt.

Stiansen anbefaler sitrongress i marinaden, men det var ikke tilgjengelig i min nærmeste matbutikk sist jeg var der. Da bare erstattet jeg den med å helle over saften fra en halv lime. Jeg har også halvert sukkermengden i laken, uten at jeg synes det har gått ut over sluttresultatet. Det eneste jeg synes absolutt må være med i denne retten er mangoen. Den bidrar med det søte og myke mot alle de hardere grønnsakene. Oppskriften kan virke stor, men tro meg den får ben å gå på når den kommer på bordet.

Thaimarinerte grønnsaker passer veldig godt til stekt og grillet fisk, men er også super å servere sammen med små marinerte grillspyd

Ingredienser

  • 1 mango
  • 1 gulrot
  • 1 rød paprika
  • 100 gr kål
  • 1/2 slangeagurk
  • 1 bunt vårløk
  • 1 rødløk
  • 1/2 potte koriander (valgfritt
  • --
  • 1 dl 7% hvit eddik
  • 1 dl vann
  • 1/2 dl sukker
  • saften fra 1/2 lime
  • 1 sint chili skåret i ringer
  • 5 cm ingefær skåret i skiver
  • 2 ss fiskesaus
  • 2 ts sesamolje

Fremgangsmåte

  • Skjær alle grønnsakene opp i munnrette biter.
  • Bland deretter alle grønnsakene unntatt korianderen i en bolle.
  • Kok opp alle ingrediensene til marinaden, og når sukkeret har løst seg opp helt, siles den og helles varm over grønnsakene.
  • La grønnsakene stå til det har kjølt seg ned - ca. en halv time. Rør rundt 2-3 ganger i løpet av denne tiden slik at alle grønnsakene blir dekket av marinade.
  • Bland inn korianderen rett før servering.

Denne retten kan serveres til nesten alt. Særlig godt synes jeg det er til fisk og grillmat.

Tips

Du kan bruke masse forskjellige grønnsaker i denne salaten, men pass på at de er sånn nogen lunde harde. Du kan bruke blomkål, stangselleri, fenikkel, sukkererter, reddiker, kålrot, asparges, rødkål og sikkert mye annet også. Jeg liker å tenke på at salaten skal bli fargerik og så synes jeg mango er et must.
