Noen ganger kan jeg spore en oppskrift tilbake til en nøyaktig kilde, fra en kokebok, mamma, en artikkel i avisen eller hva som helst. Andre oppskrifter har liksom bare kommet flyvende på en fjøl. Og så har den sneket seg inn i repertoaret mitt uten at jeg vet hvor den kommer fra. Spagetti med røkelaks tilhører den siste kategorien. Den har i grunn alltid vært der, og vender stadig tilbake på menyen. Det er i hvert fall to grunner til det. For det første er dette noe alle i familien liker.  Den andre og ofte minst like viktige grunnen er at det går veldig fort å lage den til. Det tar akkurat så lang tid som det tar å koke spagetti. Har du røkelaks liggende igjen etter jul, er det enda en god grunn til å lage denne.

I den grad jeg har noen nyttårsforsetter, er det å spise mer fisk i det nye året ett av dem. Jeg er veldig glad i fisk, men det er allikevel ikke så ofte vi har mer enn én fiskemiddag i uken. Det vil jeg gjøre noe med. Gode, lettvinte middager som spagetti med røkelaks er definitivt med på å nå det målet. Ingredienser

  • 300-400 gr røkelaks i biter
  • 3 dl kremfløte
  • 1 pk snøfrisk
  • 2 ss sitronsaft
  • 3 ss finhakket dill
  • salt og pepper etter smak
  • Spagetti til 4 personer

Fremgangsmåte

  • Begynn med å sette på spagettivannet.
  • Mens du venter på at det skal koke opp skjærer du røkelaksen opp i små terninger. Det er viktig å bruke røkelaks i stykke og ikke skiver. Skivene blir for tynne og går i oppløsning i sausen.
  • Når du putter spagettien i det kokende vannet koker du opp fløten og snøfrisk i en gryte og rør slik at det blir klumpefritt.
  • Tilsett sitronsaften. Smak på sausen, den skal smake friskt. Virker den litt vel mektig, tilsett mer sitronsaft.
  • Et par minutter før spagettien er ferdigkokt tilsett lakseterningene og dillen. La det trekke et par minutter ved svak varme.
  • Kvern over litt pepper og tilsett evt. litt salt. Det er ofte ikke nødvendig med noe salt, da fisken i seg selv er nokså salt.
  • Slå vannet av spagettien og hell sausen over.

Server med en frisk grønn salat til. Velbekomme.
