I flere somrer har vi feriert på Liguriakysten, og det har blitt et av mine definitive favorittreisemål for sommerferien. Liguria er den tynne stripen med land før fjellene reiser seg og blir til Piemonte rett over grensen fra den franske rivieraen. Det er lett å forklare hvorfor jeg har blitt så glad i dette området. Klimaet er veldig bra om sommeren for det blir sjelden veldig varmt, naturen er vakker, strendene er flotte, det er strødd en rekke nydelige byer bortover hele kysten, menneskene er hyggelige og ikke minst, så er maten veldig god. Skjønt det siste kan vel sies om veldig mange steder i Italia. En av de kulinariske godsakene som Liguria har gitt til verden er pesto, eller pesto alla genovese – altså pesto fra Genova. En rett som går igjen på lunsjbordet vårt når vi er i Liguria har pesto som en av sine hovedingredienser. Denne retten er trofie al pesto fagiolini e paptate. På norsk: pasta med pesto, bønner og poteter. Dette er en aldeles nydelig og veldig enkel rett som metter godt og passer fint om du ønsker å ha et vegetarisk måltid.

Trofie er korte, tynne, tvinnede pastaer. De er typiske for Liguria og ser nokså rustike ut. Det er ikke så lett å få tak i disse her hjemme, men det går fint å bruke andre korte pastatyper også, som orechetti eller strozzapeti. Jeg bruker strozzapeti. Disse pastaene har forresten et interessant navn. De betyr prestekvælere. Forklaringen skal være at de ligner litt på den stolaen prestene har utenpå prestedrakten, eller at de er så gode at selv prester er klare til å drepe for å få spise dem. Ingen av delene er nok riktige, men et morsomt navn er det jo uansett. Orechetti forresten, betyr små ører.

Pesto lages strengt tatt med pinjekjerner, men det er veldig dyrt og kan føles litt ekstravagant på en vanlig hverdag. Men det går fint å lage pesto med valnøtter også, eller en blanding.

Ingredienser

  • 400 gr pasta
  • 300 gr poteter
  • 300 gr aspargesbønner
  • 60 gr basilikumblader (eller en blanding av basilikum og persille)
  • 50 gr valnøtter1 fedd hvitløk
  • 50 gr parmesan
  • revet skall av 1/2 sitron (kan velges bort)
  • 1-1,5 dl olivenolje
  • salt og pepper

Fremgangsmåte

  • Begynn med å lage pestoen. Rist valnøttene i en tørr panne til det begynner å dufte av valnøtter. Sett til side til de er litt avkjølt.
  • Ha nøtter, blader, parmesan, grovhakket hvitløk og sitronskall i en food processor og kjør det til en finkornet masse. Spe med olivenolje til det har fått en passelig konsistens. Den skal ikke være tørr, men heller ikke veldig oljete. Smak til med salt og pepper og sett til side.
  • Kok opp rikelig med lettsaltet vann i en stor kjele. I mens skjær potetene i 1x1 cm terninger.
  • Ha pastaen og potetene i vannet og kok i ca. 10 minutter eller etter anvisning på pakken. Potetene tar ca. 10 minutter, så om pastaen skal koke mindre has bare potetene oppi litt før pastaen.
  • Når det er ca. 4 minutter igjen av koketiden has aspargesbønnene oppi. Når alt er ferdig kokt helles vannet av.
  • La pastaen og grønnsakene dampe litt av seg på platen, men pass på at det ikke setter seg fast, eller blir brent i bunnen.
  • Ta til side gryten og rør inn pestoen.

Server varm, lunken eller kald, gjerne med en tomatsalat ved siden av. Sett god olivenolje og ekstra parmesanost på bordet slik at alle kan ta litt ekstra av dette. Vel bekomme.
