For mange år siden var familien på ferie i Thailand og jeg var så heldig å få være med en kinesisk kokk inn på kjøkkenet på hotellet der vi bodde noen dager. Det gikk stort sett i woket mat og alt kjøttet ble marinert før det kom i woken. Det overrasket meg at han brukte en i mine øyne veldig uasiatisk ingrediens i marinaden, nemlig whisky. I ettertid har jeg skjønt at han ikke er den eneste som bruker dette i stedet for kinesisk matvin. Whisky er nok for mange lettere å komme over enn kinesisk matvin, men føles kanskje litt vel dekadent å bruke det i matlagingen på en helt vanlig mandag. Jeg har imidlertid funnet ut at tørr sherry også fungerer utmerket, og av den grunn har jeg en flaske tørr sherry (type fino) stående i kjøkkenskapet. Det gir en ekstra piff på marinaden og er definitivt verdt et forsøk.

Wok er lettvint og sunn hverdagsmat, og det er mat de aller fleste liker, dessuten er det jo veldig fleksibel mat. Nedenfor har jeg laget en grønnsaksblanding der jeg synes alle ingrediensene passer veldig godt til hverandre og til kyllingen. Men liker du ikke aspargesbønner, bruk sukkererter i stedet og får du ikke tak i edamame (som er soyabønner), kan du bruke hestebønner eller erter og shitakesopp, vel det kan jo byttes ut med aromasopp eller sjampinjong om du liker det bedre.

Ingredienser

  • 600 gr kyllingbryst
  • 2 fedd hvitløk, finhakket
  • 2 ss revet ingefær
  • 2 ss soyasaus
  • 2 ss tørr sherry / kinesisk vin
  • 1 ss østerssaus
  • chiliflak
  • nykvernet pepper
  • nøytral olje til steking
  • 400 gr. aspargesbønner
  • 1 pk edamame
  • 2 små gule løk
  • 12 shitakesopp

Fremgangsmåte

  • Begynn med å gjøre marinaden til kyllingen klar. Bland hvitløk, ingefær, soya, chiliflak, pepper, sherry og østerssaus i en bolle.
  • Skjær kyllingen i munnrette biter og bland inn i marinaden. Sett til side. Kan godt stå 2-3 timer, men da i kjøleskapet.
  • Legg shitakesoppen i varmt vann, om den er tørket. Den bør da ligge i 20-30 minutter.
  • Kok opp ris.
  • Tilberede edamamen etter anvisning på pakken og rens bønnene ut av belgene.
  • Skjær aspargesbønnene i to. Klem vannet ut av soppen og skjær den opp i skiver. Skjær løken i tynne båter. Alt skal nå være klart til å wokes.
  • Varm oljen til den er glovarm. Fisk kyllingen opp av marinaden, men ta vare på marinaden, for den skal brukes etterpå. Rørestek kyllingen i 2-3 minutter. Ta kyllingen ut av woken.
  • Ha om nødvendig litt mer olje i woken og ha oppi aspargesbønner, løk og sopp. Rørestek et par minutter til aspargesbønnene er nesten møre.
  • Ha edamamebønnene og kyllingen tilbake i woken og hell over marinaden.
  • Bland godt og la alt bli gjennomvarmt.

Server straks med ris ved siden av.

Tips

Du kan godt bruke svinefilet i stedet for kylling.

Denne har jeg lyst til å prøve, ser veldig godt ut! Men kan det være en skrivefeil «østerssauschiliflak»?
