Første gang jeg spise kylling med sitrongress var i Vietnam for snart 20 år siden. Det var en utrolig smaksopplevelse. Da jeg og Husbond kom hjem til gamlelandet startet søket etter en oppskrift slik at vi kunne gjenskape i hvert fall en blek kopi av det vi hadde fått servert på den andre siden av jordkloden. Etter mange søk på nettet og mye prøving og feiling har jeg kommet frem til en oppskrift som i hvert fall passer godt med minnet om denne retten. Kylling med sitrongress står regelmessig på middagsbordet hjemme hos oss, og det er alltid populært når det skjer, for dette er noe alle liker.

Oppskriften inneholder ganske mye fiskesaus. Jeg har erfart at forskjellige merker har veldig forskjellig saltinnhold. Jeg anbefaler deg derfor sterkt å begynne med et par spiseskjeer og heller øke mengden om du ønsker mer umamismak, men pass på. Sist jeg lagde dette ble maten nesten uspiselig på grunn av for mye salt.

Ingredienser

  • 4 kyllingbryst
  • 4 fedd hvitløk finhakket
  • 2 stilker sitrongress, finhakket
  • 2-4 ss fiskesaus
  • 4 ss rapsolje, eller annen nøytral olje
  • 1 ss sukker
  • 4 vårløk skåret i biter
  • 1-2 rød chilli, finhakket
  • 50 gr. cachewnøtter, grovhakket
  • 100 gr. bønnespirer, kan sløyfes
  • ½ slangeagurk

Fremgangsmåte

  • Skjær kyllingen i terninger.
  • Bland hvitløk, sitrongress, fiskesaus, rapsolje og sukker i en bolle og ha i kyllingbitene og mariner i ca. 20 minutter.
  • Stek kyllingbitene sammen med marinaden i en wok (eller stekepanne) til kyllingen er nesten gjennomstekt 3-4 minutter.
  • Tilsett vårløk, chili og cachewnøtter og la det steke med til kyllingen er gjennomstekt.
  • Anrett kyllingen på et fat med agurk og evt. bønnespirer.

Server med ris ved siden av og evt. wokkede grønnsaker som kinakål, brokkoli eller sukkererter.
