I dag har farmoren min bursdag. Hun er 94 år, og denne bloggposten er til ære for henne. Hun arbeidet i mange år som kantinedame for å forsørge familien. Hun gjorde det som måtte gjøres – en skikkelig tøff dame med andre ord. Og dessuten har hun gitt meg mange gode matminner. Alt fra flesk i duppe til skikkelig høy bløtkake og selvfølgelig italiensk salat. Den vekker veldig gode barndomsminner hos meg. Jeg husker tydelig kveldsmaten hjemme på kjøkkenet til farmor med helt nylaget salat på ferskt brød.

Med et begrenset budsjett var hun flink til å få mye ut av lite, også på matfronten. Og på denne tiden av året dukket det ofte opp hjemmelaget italiensk salat på smørbrødene hennes. Dette er skikkelig godt og har lite å gjøre med den varianten man får kjøpt i butikken.  Salaten er helt klart best når den lages med nykål og ikke gammel grov kål. Dessuten kan skinken fint erstattes med servelat. Egentlig synes jeg kanskje det er bedre, men kokt skinke er jo utvilsomt magrere. Den litt krydrede servelaten gjør seg godt. Når det gjelder majonesen går det fint med kjøpemajones, men enda bedre blir det om du lager majonesen selv. Dropp da hvitløken i oppskriften.

Og så en liten fun fact til å runde av med. Den italienske salaten har ingenting med Italia å gjøre, men heter visstnok det på grunn av fargene den har. Den inneholder nemlig grønn kål, rød skinke og hvit majones – voila; det italienske flagget.

Ingredienser

  • 100 gr (ny)kål
  • 5 skiver kokt skinke eller servelat
  • 3 ss majones
  • 2 ss rømme
  • Salt og pepper

Fremgangsmåte

Nok til fire høye smørbrød.

  • Bland sammen majones, rømme og salt og pepper i en blandebolle.
  • Finstrimle kålen , gjerne med mandolin om du har og skjær skinken i tynne strimler.
  • Ha kålen og skinken i blandebolle sammen med dressingen og rør godt til alt er blandet og smak evt. til med mer salt og pepper.

Server på en brødskive, gjerne med litt salat under.
