I går hadde vi reker til middag. Husbond hadde vært litt raus i rekedisken og vi hadde litt reker igjen.  Vi kunne selvsagt spist dem opp i dag pillet på brødskiva med litt majones og en skvis sitron. Men jeg synes det er mye mer spennende å lage noe annet, nytt med restene. Dermed bestemte jeg meg for å lage en rekesalat, inspirert av min farmors italienske salat.  Kjøttet ble byttet ut med reker og en haug med urter og sitronsaft ble lagt til. Dermed oppsto en ny sommerfavoritt på brødskiva – italiensk rekesalat.

Det å blande middagsrester med grønnsaker i en dressing, er tre gode ting på en gang. Rester blir spist opp, du får i deg flere grønnsaker og resultatet er et velsmakende pålegg som overhodet ikke føles som kjedelige rester.

Du kan selvsagt lage denne påleggsalaten hele året, men aller best synes jeg den blir på sommeren mens kålen fortsatt er sprø , søt og delikat i smaken.

Hvis du er like heldig som meg, har du tilgang til litt friske urter.  Kanskje har du kjøkkenhage, balkongkasse, kolonihytte eller rett og slett noen potter med urter i kjøkkenvinduet, og har du urter, så bruk dem. De gir ekstra smak til maten og inneholder mye som er bra for deg og kroppen din.  Jeg kom hjem fra ferie i går, og jammen har det ikke vært usedvanlig frodig i sommer. Urtene nærmest velter ut av mine pallekarmer så her er det bare å kjøre på. Jeg har brukt ruccola og estragon, men bruk det du har og liker, eller dropp urtene helt om du heller vil ha en helt enkel italiensk rekesalat.

Ingredienser

  • 100 gr nykål
  • 1 neve ruccola
  • 1 liten kvist estragon
  • litt reker (jeg hadde ca. 20 mellomsmå reker, men bruk det du har)
  • 3 ss majones
  • 2 ss lettrømme
  • 1 ts sitronsaus
  • salt og pepper

Fremgangsmåte

  • Kutt kålen i tynne strimler, gjerne med mandolin om du har.
  • Bland sammen majones, rømme og sitronsaft og smak til med salt og pepper.
  • Pill rekene og grovhakk dem. La evt. noen være hele til å pynte med.
  • Hakk ruccola og estragon i små biter.
  • Bland kål. urter og reker inn i dressingen.
  • La den gjerne stå kaldt en stund slik at smakene får sette seg.

Server på brødskive og nyt sommeren.
