Dette er en spennende suppe, eller kanskje gryterett eller asiatisk risotto er en mer dekkende beskrivelse av retten. Suppen er altså temmelig tyktflytende. Men det kommer jo i stor grad an på hvor mye vann som brukes til å lage buljongen.

Den har et tydelig asiatisk stempel på seg, uten at det er like lett å plassere den i ett enkelt land. Her er det krydder og fiskesaus som jeg forbinder med Thailand og tang og sushiris som forbindes med med Japan. Men det gjør mindre, for godt ble det uansett. Dette er typisk mat jeg vil plassere i kategorien comfort-food. Her snakker vi om ris som er kokt i en herlig aromatisk hjemmelaget kraft med deilig mykt kyllingkjøtt og sprøe grønnsaker. «What’s not to like», sier nå jeg.

Det er kanskje noen temmelig eksotiske ingredienser. Kombu var et nytt bekjentskap for meg. Det er en tangart som er tørket. Den Jeg fikk tak i det i en forretning som er temmelig velutstyrt med japanske ingredienser. Jeg har googlet litt og ser at tørkt wakame kan brukes som erstatning. eAlternativet er å droppe den helt. Edamame er kanskje også en litt fremmed ingrediens for flere. Det er ferske (frosne) soyabønner. Disse fås også i velassorterte asiatiske forretninger. Disse kan erstattes med hestbønner eller erter. Det står sushiris i oppskriften, men jeg tror nok at risottoris vil fungere like bra.

Ingredienser

  • 3 kyllinglår
  • 5 cm ingfær, skrelt og skåret i stykker
  • 1/2 kanelstang
  • 6 stjerneanis
  • 10 nellik
  • 3 flak kombu
  • 1,5 l vann
  • 1 ts salt
  • 2,5 dl sushiris
  • 1 ss fiskesaus
  • 1 ss brunt sukker
  • 1 bunt vårløk
  • 200 gr edamame
  • koriander

Fremgangsmåte

  • Legg krydder, kombu og kylling i en stor gryte og hell over kaldt vann. Kok opp og ta bort alt skummet som danner seg på toppen etter hvert.
  • Skru varmen litt ned og la suppen syde i ca. 1 time.
  • Da skal kyllinglårene være helt gjennomkokte og møre.
  • Ta opp kyllinglårene og sil suppen gjennom et klede tilbake til en gryte.
  • Kast krydder og kombu.
  • Tilsett risen og smak til kraften med fiskesaus og sukker. La suppen småkoke i 15-20 minutter til risen er kokt.
  • Mens risen koker plukk kjøttet av kyllinglårene og del det i munnrette biter. Skjær vårløken i tynne ringer og kok edamamen som anvist på pakken. Hakk korianderen grovt. Rør inn det meste av vårløken i suppen like før risen er klar.
  • Smak på suppen og kjenn om den trenger mer fiskesaus eller sukker.
  • Når suppen er ferdig drysses resten av vårløken, edamamen og korianderen over.
