På denne tiden i fjor bestemte jeg med for å innføre kjøttfri mandag som et av mine nyttårsforsett. Det har gått veldig fint, og med unntak av ferie og høytider har vi stort sett hatt vegetarmiddag hver mandag og det har vært en positiv opplevelse. Jeg ser  ingen grunn til å slutte med det, og derfor vil det fortsette å komme vegetaroppskrifter med jevne mellomrom her.

Jeg synes at sånne gratenger er skikkelig trøstemat. Det er myke grønnsaker pakket inn i en deilig ostedyne. Jeg glad i magen når jeg spiser mat som dette. Det kan jo skyldes mammas gratinerte blomkål fra barndommen, eller at jeg rett og slett synes at grønnsaker og ostesaus er en god kombinasjon. Uansett forklaring så er det i hvert fall slik det er fatt.

Jeg har brukt blomkål, brokkoli og poteter. Da jeg skulle rense blomkålhodet viste det seg å ha usedvanlig mange blader og få buketter. Jeg bestemte meg derfor for å ha i litt makaroni også for å være sikker på at det ble nok til alle. Potetene kom med fordi det var noen igjen fra søndagsmiddagen. Dersom du ikke har potetrester, kan rå poteter skjæres opp i terninger og kokes sammen med de andre grønnsakene. Som du skjønner er dette en oppskrift som det er fint å sjonglere med, alt etter hva man har og liker. Har du noen grønnsaksrester i kjøleskapet, er det bare å skjære i biter og ha i formen med det andre. Vil du bruke andre grønnsaker som ikke allerede er kokt, bør de forkokes sammen med blomkålen og brokkolien slik at de får samme konsistens.

Ingredienser

  • 1 lite blomkålhode
  • 1 brokkolibukett
  • 4 kokte poteter
  • 5 dl ukokt makaroni
  • 2 ss smør
  • 2 ss hvetemel
  • 5 dl melk
  • 1/2 ts salt
  • 1 kn.odd malt muskatt
  • 3 never revet Jarlsberg

Fremgangsmåte

  • Sett oven på 220 grader.
  • Skjær blomkål og brokkoli i små buketter og kok knapt møre i lettsaltet vann.
  • Hell av vannet og ha grønnsakene i en smurt ildfast form.
  • Skjær potetene i biter og ha i formen sammen med grønnsakene.
  • Kok makaroni etter anvisning på pakken.
  • Hell av vannet og ha makaronien oppi sammen med grønnsakene. Bland alt godt i formen.
  • Lag hvit saus ved å smelte smøret og rør inn melet. Spe med litt melk og rør til det er helt uten klumper. Tilsett litt og litt melk og rør slik at det blir en klumpefri saus. Smak til med salt og muskatt.
  • Rett før sausen er ferdig tilsettes 2/3 av osten. La osten smelte ned i sausen. Hell sausen over grønnsakene og dryss over resten av osten. Sett inn i ovnen og la det steke i ca. 1/2 time. Retten skal være gyllen på toppen. Server med en frisk salat ved siden av.
