Oppskriften på denne suppen er hentet fra Julia Childs kokebok «Det franske kjøkken». Og er en av mine absolutte favoritter på suppefronten. I utgangspunktet er det en enkel suppe bestående av kraft og karamellisert løk med et ostsmørbrød på toppen. Men du verden så godt det blir.

Ingredienser

  • 400 gr løk i tynne skiver
  • 2 ss smør
  • 1 ss olje
  • 1 ts sukker
  • 1 ts salt
  • 2 ss hvetemel
  • 1 l kjøttbuljong (mørk type)
  • ½ dl hvitvin
  • nykvernet pepper
  • 2 ss konjakk
  • 4 ristede loffskiver uten skorpe
  • 1 dl revet ost

Fremgangsmåte

  • Brun løken ved lav varme i smøret og oljen i ca. 15 minutter. Ta av lokket og sett opp temperaturen til middels. Tilsett sukker og salt. Kok i 30-40 minutter med hyppig omrøring. Løken skal ha en jevn, gyldenbrun farge uten å være brent.
  • Dryss på melet og rør i 3 minutter.
  • Tilsett buljongen og vinen og la det koke i 30-40 minutter til.
  • Like før servering tilsettes konjakken.
  • Smak til med pepper.
  • Hell suppen over i serveringsskåler.
  • Legg en skive i hver og topp med ost.
  • Gratiner under grillen i ovnen til osten er gyllen.
