Hjemme hos oss går det fort i svingene om morgenen. Å si at vi står og diller med matpakkene i grålysningen er å ta hardt i. Derfor liker jeg å lage et lite lager i fryseren med mat som egner seg til matpakken. Disse empanadas med mais og paprika er nettopp sånn mat. De er forholdsvis enkle å lage og de egner seg godt for frysing. Dessuten tiner de fort, slik at de kan tas rett fra fryseren og legges i matboksen. Da er de tint når det er tid for spising. Spe på med litt oppskårede grønnsaker og et eple, og du har en sunn, velsmakende og mettende matpakke på et blunk. Grønnsakene kan godt skjæres opp kvelden før og legges klar i matboksen.

Deigen som er rundt kjøttfyllet er veldig smidig og lett å jobbe med. Og den blir deilig flakete når den blir stekt. Det gir en fin kontrast til det krydrede kjøtt og grønnsaksfyllet som er inni.

Disse empanadasene er fylt med kjøttdeig av svin, mais og paprika. Men her er det selvsagt bare å kjøre på med det fyllet man selv liker best. På bloggen ligger det allerede en oppskrift med kjøtt og paprika og en vegetarvariant.  Sjekk gjerne ut disse om du vil ha mer inspirasjon til fyll.

Empanadas er også supre å ta for sultne barn (eller voksne) som kommer hjem fra skolen og vil ha en liten matbit før trening eller rett og slett bare trenger litt ekstra påfyll.

Ingredienser

  • 5 dl hvetemel
  • 1/2 ts salt
  • 150 gr smør
  • 1 dl vann
  • --
  • 400 gr kjøttdeig av svin
  • 1 liten løk
  • 1 rød paprika
  • 1/2 boks mai
  • salt og pepper
  • 1 ts paprikapulver
  • 1/2 ts spisskummen
  • 1 ts oregano
  • 1 dl vann
  • 1 egg

Fremgangsmåte

Denne oppskriften gir ca. 20 empanadas.

  • Start med å lage deigen. Bland mel og salt og smuldre inn smøret. Bland inn vannet og kna deigen til den er smidig. Alternativt kan du bruke en kjøkkenmaskin. La deigen hvile minst 1/2 time i kjøleskapet.
  • I mens kan du lage fyllet. Stek kjøttdeigen med salt og pepper.
  • Skjær løk og paprika i småbiter. Ha grønnsakene oppi sammen med maisen og krydderet. La det surre noen minutter. Tilsett vannet og la alt småkoke til vannet er fordampet. Fyllet skal være nokså tørt. Sett til side og la det kjøle seg ned til romtemperatur.
  • Sett ovnen på 200 grader. Ta deigen ut av kjøleskapet og kjevle ut til en tynn leiv som er ca. 2 mm tykk. Bruk en skål som mal og skjær ut rundinger som er ca. 12 cm i diameter.
  • Legg sirklene over på en bakeplate med bakepapir på. Legg 1 ss fyll på den ene halvdelen av hver. Brett deigen over på midten slik at det blir halvmåner. Klem godt sammen med en gaffel rundt kanten for å lukke. Pensle med sammenpisket egg.
  • Stek i 15 minutter.

Server med en grønn salat ved siden av.
