Godt brød hører også julen til. Her kommer oppskrift på et knallgodt eltefritt surdeigsbrød med valnøtter som ikke krever så mye innsats, men gir et fantastisk resultat. Brødet får en fin, sprø skorpe, deilig struktur inni med lett smak av surdeig og valnøtter. Valnøttene forresten, de rister jeg først. Da mister de den rå smaken og får en rundere, litt brent (på en god måte) smak. Dette knepet anbefaler jeg på det varmeste. Det gir en fantastisk smak. Dette er et fint surdeigsbrød, men ønsker du å laget et grovt i stedet, eller kanskje i tillegg til dette fine, kan du prøve å lage dette grove surdeigsbrødet med rug.

Ikke surdeig?

Har du ikke surdeig, er det for sent nå å lage en. Men kanskje kjenner du en som har, da kan du helt sikkert få en avlegger. Det går også an å få kjøp surdeigsstarter nå. Hvis ikke går det an å lage dette med gjær også, som vanlig eltefritt brød. Da får man selvsagt ikke surdeigssmaken, men brødet blir nok veldig godt allikevel vel.

Ikke vente til neste dag?

Dersom du ikke har tid til å la det heve natten over, kan du i stedet elte brødet i en kjøkkenmaskin i ca. 10 minutter og sette det til heving på et lunt sted. Dette gir også et godt resultat.

Ingredienser

  • 200 gr surdeigsstarter
  • 450 gr hvetemel
  • 2,5 dl vann
  • 1 ts sukker
  • 1 ts salt
  • 70 gr valnøtter

Fremgangsmåte

  • Sett ovnen på 200 grader. Legg valnøttene i en ildfast form og rist dem i ca. 10 minutter. Pass på at de skal bli mørkere, men ikke brente.
  • Rør surdeigen ut i vannet sammen med sukker og salt.
  • Tilsett hvetemelet og valnøttene og bland godt.
  • Dekk til og sett i kjøleskapet natten over.
  • Ta deigen ut i god tid før den skal stekes så den rekker å få romtemperatur.
  • Hell deigen ut på et bakepapir med mel på. Brett deigen 4-5 ganger inn mot midten fra hver side. Dette strammer opp deigen.
  • La deigen ligge med skjøten opp og legg en bolle eller lignende over deigen. La den ligge i ca. 1 time.
  • Etter 30 minutter sett ovnen på 250 grader og sett en tom jerngryte med lokk inn i ovnen.
  • Etter ytterligere 30 minutter tas den varme gryten ut av ovnen og deigen hvelves over i gryten. Da vil skjøten komme ned. Snitt gjerne overflaten med en kniv.
  • Legg på lokket og stek i 30 minutter. Ta da av lokket og senk temperaturen til 220 grader og stek i ytterligere 10-15 minutter. Brødet er ferdig når det har fått en fin sprø skorpe og høres hult ut når man banker på det under.

Avkjøl på rist og server det til julefrokosten. Vel bekomme.
