Saftig brød med sprø skorpe og en svak smak av surdeig. Om ikke dette får tennene dine til å løpe i vann, vet du ikke hva du har gått glipp av. Dette brødet er rett og slett fantastisk godt, og uten særlig innsats kan du også lage et fint surdeigsbrød.

Jeg har holdt på å bake med surdeig i omtrent ett år nå. I sommerferien klarte jeg å ta livet av Jeppe (min surdeigsstarter), men nå har jeg en ny oppe og går. Jeg begynte med surdeigsbaking fordi jeg ønsket meg et grovt rugbrød av dansk type. Det har jeg fått til. Dilemmaet mitt med surdeigen har vært at vi ikke spiser så mye brød her i heimen, så av og til har jeg måttet mate Jeppe uten å ha et bakeprosjekt. Det betyr surdeig i vasken, og det liker jeg dårlig.

Løsningen på dette problemet har for meg blitt å lage  fine et fint surdeigsbrød de gangene jeg ikke skal lage rugbrød. Og la meg si det sånn: Det har blitt en suksess i familien. Brødet er nærmest loff, og sikkert ikke det vi burde spise til hverdags, men av og til er det vel greit, og det føles mye bedre å sitte med et skikkelig godt nybakt brød, enn å kaste deig i vasken.

 

Ikke surdeigsstarter

Jeg har altså laget min egen surdeigsstarter, og det er slett ikke vanskelig. Om du ønsker å gjøre det samme, finner du en fin forklaring på surdeig.no. Det tar sin tid, så det er ikke noe du starter med samme dag som du har tenkt å bake. Er du av den utålmodige typen, har jeg sett at det går an å kjøpe surdeigsstarter i butikken. Dette har jeg ingen erfaring med, men jeg antar at den er helt OK, og at fremgangsmåte og resultat blir det samme. Et annet alternativ er å få en starter av en du kjenner som allerede har en. Som antydet ovenfor må en starter mates med jevne mellomrom, og derfor er det lett å dele en starter.

Ingredienser

  • 200 gr surdeigsstarter
  • 450 gr hvetemel
  • 2,5 dl vann
  • 1 ts sukker
  • 1 ts salt

Fremgangsmåte

  • Rør surdeigen ut i vannet sammen med sukker og salt.
  • Tilsett hvetemelet og bland godt.
  • Dekk til og sett i kjøleskapet natten over.
  • Ta deigen ut i god tid før den skal stekes så den rekker å få romtemperatur.
  • Hell deigen ut på et bakepapir med mel på. Brett deigen 4-5 ganger inn mot midten fra hver side. Dette strammer opp deigen.
  • La deigen ligge med skjøten opp og legg en bolle eller lignende over deigen. La den ligge i ca. 1 time.
  • Etter 30 minutter sett ovnen så varmt som mulig og sett en tom jerngryte med lokk inn i ovnen.
  • Etter ytterligere 30 minutter tas den varme gryten ut av ovnen og deigen hvelves over i gryten. Da vil skjøten komme ned. Snitt gjerne overflaten med en kniv.
  • Legg på lokket og stek i 30 minutter. Ta da av lokket og senk temperaturen til 220 grader og stek i ytterligere 10-15 minutter. Brødet er ferdig når det har fått en fin sprø skorpe og høres hult ut når man banker på det under.

Avkjøl på rist  og oppbevar brødet pakket inn i et kjøkkenhåndkle. Vel bekomme.
