Julekake med masse smør og rosiner er så utrolig godt, og hører definitivt julen til. Denne kaken, eller brødet som noen kaller det, er og blir en favoritt. Jeg liker best å spise den med et tykt lag meierismør. Faktisk bruker jeg ostehøvel til å skjære skiver av smøret med. Det gir meg et jevnt lag som er akkurat passe tykt og så blir smøret fort mykt. Husbond liker det best med brunost på. Men hey, her skal alle få spise sin julekake som de selv liker.

Jeg har brukt en oppskrift jeg fant på krem.no. Men har brukt en annen fremgangsmåte enn den Elin beskriver. Gjærbakst har alltid fremstått som ren alkymi for meg, det vil si inntil jeg forsto trikset med elting. Og trikset? Det er rett og slett tid. Lang elting gir luftig bakst er min erfaring. Dessuten har jeg sluttet å varme melken for å løse opp gjæren i den. Jeg smuldrer rett og slett gjæren rett i melet og tilsetter melken kald, rett fra kjøleskapet. Varmen som oppstår under eltingen er tydeligvis nok til å sette gjæren i gang. Dette er en utrolig enkel metode som fungerer hver gang.

Ingredienser

  • 150 gr sukker
  • 50 gr gjær
  • 2 ts kardemomme
  • ca. 800 g hvetemel
  • 1 egg
  • 4 dl melk
  • 100 gr smør
  • 200 gr rosiner

Fremgangsmåte

Denne oppskriften gir 2 kaker.

  • Bland hvetemel, sukker og kardemomme i en bakebolle.
  • Smuldre gjæren oppi bollen.
  • Tilsett melk og egg og elt deigen i ca. 10 minutter. Bruk gjerne kjøkkenmaskin.
  • Tilsett smøret i små biter og fortsett å elte i ytterligere 5 minutter
  • Ha deigen ut av bollen og elt rosinene inn slik at de blir godt fordelt.
  • La deigen heve på et lunt sted til den er omtrent dobbelt så stor.
  • Del deigen i to like store emner og form to runde kaker.
  • Etterhev disse i ca. 30 minutter.
  • Pensle med egg og stek i ovnen på 175 grader i omtrent 40 minutter.

Tips

Dersom du ønsker julekaker som er litt flatere på toppen, kan du trykke dem litt ned når de er ferdig etterhevet. La dem stå i 5 min før du pensler med egg og setter inn i ovnen.
