Tilberedelse av lutefisk er litt myteomspunnet. Visstnok kan fisken forsvinne dersom man ikke passer på og ta den ut tidsnok. Vanligvis bruker man å tilberede lutefisken enten ved å trekke den i vann, eller ved å bake/dampe den i vanlig ovn. Når den bakes i ovnen må man bruke aluminiumsfolie, men må være forsiktig så folien ikke kommer i kontakt med fisken. For fisken vil reagere med aluminiumen. Dessuten er det vanskeligere å følge med på fisken, fordi man  ikke ser den når den er dekket til. Jeg bestemte meg derfor for å lage lutefisk i dampovnen. Generelt sett er jo fisk i dampovn er jo en veldig god idé, så hvorfor ikke lutefisk? La meg bare si det med en gang: Lutefisk i dampovn er en kjempegod idé. Tilberedningstiden er litt kortere og det var veldig lett å følge med på når fisken ble ferdig.

Jeg liker best når lutefisken er fast (i fisken), så derfor strødde jeg på rikelig med vanlig salt en god time før jeg skulle tilberede den. Dette trikset gjør at mye av væske blir trukket ut av fisken og den blir dermed fastere. Bare husk å skylle godt etterpå så ikke den blir alt for salt.

Ingredienser

  • 2 kg lutefisk
  • 2 ss fint bordsalt
  • 150 gr bacon
  • evt. ribbefett eller smør
  • 400 gr selskapserter
  • 50 gr smør
  • salt og pepper
  • poteter

Fremgangsmåte

  • 1-2 timer før tilbereding, dryss salt over lutefisken.
  • Stek bacon sprøtt i pannen, blir det for lite fett fra baconet, kan du tilsette litt ribbefett eller smeltet smør. Hold det varmt.
  • Kok potetene.
  • Skyll saltet av fisken.
  • Sett dampovnen på 100 gr / 100% damp, og damp lutefisken i ca. 20 minutter. Tiden vil variere med tykkelsen på stykkene, så hold øye med fisken de siste 5 minuttene.
  • Mens fisken dampes, kokes ertene etter anvisningen på pakken. Når ertene er ferdig kokt, tas ca. 1 dl av kokevannet til side før resten helles av.
  • Kjør ertene med en stavmikser sammen med kokevannet og smøret. Smak til med salt og pepper.

Server straks med det tilbehøret du liker som sennep, lefser, sirup eller brunost. Vel bekomme.
