Når det blir mørkt og grått ute, er det deilig å kunne lage mat som tilfører litt farger i hverdagen. Grønnsaker finnes jo i nær sagt alle farger og er en selvsagt måte å tilføre maten farger på. Min vintersalat er proppfull spreke farger og friske smaker. Her er det rød kål, oransje gulrot og gul appelsin i skjønn forening. I tillegg er det valnøtter for litt krønsj. Bedre kan det vel ikke bli på en trist onsdag.

Denne salaten har sine røtter tilbake på 70-tallet da råkost var in. I mitt barndomshjem på den tiden mener jeg å huske at råkost først og fremst besto av revne gulrøtter med litt sitron presset over. Ikke noe galt med det, det hender fortsatt at det står på middagsbordet mitt i 2017. Men jeg er jo veldig glad i variasjon, så å bruke litt andre grønnsaker er jo alltid et pluss i min bok.

Min vintersalat passer godt til fisk og særlig stekt fisk synes jeg. Den passer også godt som en av flere retter på et koldtbord.

Ingredienser

  • 1/2 rødkål
  • 1 gulrot
  • 1 appelsin
  • 1 neve valnøtter
  • salt og pepper

Fremgangsmåte

  • Skjær kål i så tynne strimler du klarer. Har du en mandolin går det i en fei.
  • Skjær gulroten i tynne skiver
  • Skjær filetene ut av appelsinen.
  • Klem saften ut av det som er igjen av appelsinen og ta vare på den.
  • Rist valnøttene i en tørr stekepanne til de har blitt varme.
  • Grovhakk nøttene.
  • Bland alle ingrediensene i en bolle og  hell appelsinjuicen over.
  • Smak til med salt og pepper.
