Plommesesongen er vel strengt tatt over nå, men det er fortsatt mulig å få tak i utenlandske plommer i butikken. Jeg kjøpte noen store gule. Dessverre smakte de ikke så mye som jeg hadde håpet på, men etter en liten tur i sukkerlake smaksatt med timian og sitron ble de riktig så gode. Sammen med en mascarponekrem og grovt hakkede pistasjenøtter ble de enda bedre.

I sommer- og høstsesongen er vi bortskjemt med deilig frukt som er proppfull av gode smaker. På denne tiden av året, er det fortsatt mulig å få tak i det meste, men smaken er ikke alltid på topp. Da er det å posjere frukten i en eller annen lake en riktig god ide. Hva du ønsker å posjere i kan jo være så mangt, men med en sukkerlake som er smaksatt med sitrusfrukter, urter eller krydder kommer du langt. Et annet alternativ er å posjere i vin. Pærer posjert i rødvin, for eksempel, er en klassiker. Det går til og med an å posjere i smør.

Ingredienser

  • 4 store plommer, eller 8 små
  • 200 gr sukker
  • 2,5 dl vann
  • 5 kvister sitrontimian
  • skall av ½ sitron
  • 1 dl kremfløte
  • 1 pk mascarpone
  • 1 ss sukker
  • 2 ss sitronsaft
  • Pistasjenøtter
  • Evt. timian til pynt

Fremgangsmåte

  • Kok opp vann og sukker sammen med timian og sitronskall. Kok i 10 min.
  • Vask plommene og del dem i to og ta ut steinen.
  • Hell plommene forsiktig oppi sukkerlaken og la det trekke ved svak varme i 10 minutter. Slå av varmen og la plommene avkjøle seg i sukkerlaken.
  • Pisk kremfløten halvstiv.
  • Tilsett mascarpone, sukker og sitronsaft og pisk til det blir en luftig krem.
  • Grovhakk pistasjenøttene.
  • Anrett plommene på en tallerken med litt av sirupen. Legg en klatt mascarponekrem på, og dryss over pistasjenøtter og evt. litt timianblader
