REKLAME  – Hjemme hos oss kjører vi kjøttfri mandag. Det er det mange gode grunner til. En god grunn er miljøet. Det å produsere en kilo grønnsaker krever adskillig  mindre energi enn en kilo kjøtt. En annen grunn er at det er bra for helsa å spise mer grønnsaker. De fleste av oss spiser for lite frukt og grønt, og det viser seg at de fleste sliter særlig med grønnsakene. Ved å droppe kjøttet helt sikrer du at du får i deg mer grønnsaker i hvert fall den dagen. En tredje grunn er hensynet til lommeboken. Det er langt billigere med grønnsaker enn med kjøtt, så ved å kutte ut kjøtt en dag i uken gleder du både miljøet, kroppen din og lommeboken din. Tre gode ting på en gang er ikke verst. Dessuten, er min erfaring at når jeg dropper kjøttet blir jeg tvunget til å tenke litt nytt rundt grønnsaker. Det blir liksom ikke ordentlig middag bare med en skål dampet brokkoli, aldri så stor den skålen måtte være. Derfor må jeg tenke nytt når grønnsakene spiller hovedrollen.

I dag hadde jeg lyst til å oppgradere den vanlige blomkålsuppa.  Melk og fløte er byttet ut med karri, gurkemeie og kokosmelk, og resultatet ble en knallgod suppe med klar inspirasjon fra det indiske kjøkkenet.

Ingredienser

  • 1 stort blomkålhode
  • 1/2 løk
  • 1 ss olje til steking
  • 2 ts karri
  • 2 ts gurkemeie
  • 1 l vann
  • 2 ss Touch of Taste kyllingfond
  • 1/2 pakke Blue Dragon Coconut cream
  • 1/2 ts garam masala
  • 4 skiver daggammel loff
  • 2 fedd hvitløk
  • 2 ss olivenolje

Fremgangsmåte

  • Begynn med å finhakke løken og del blomkålen i grove biter.
  • Hold av noen små blomkålbuketter til servering.
  • Fres løken i oljen til den blir myk og blank.
  • Tilsett blomkålen og stek til den har fått litt farge.
  • Tilsett karripulver og gurkemeie og la det surre et par minutter til før vann, coconut cream og kyllingfond tilsettes. la det småkoke til blomkålen er helt myk.
  • Kjør suppen glatt med en stavmixer.
  • Smak til med litt garam masala. Blir suppen for tyktflytende kan du tilsette litt mer vann.
  • Lag krutongene mens suppen koker. Skjær loffskivene i biter og stek på middels varm sammen med hvitløken i olivenoljen. Krutongene er ferdige når de har blitt gylne og sprø.
