Mange tenker nok at det er vanskelig eller tidkrevende å lage fiskekaker, men det er faktisk ikke tilfelle. I hvert fall ikke om du har en matmølle. Da er det bare å slenge alle ingrediensene oppi og kjøre det til en farse. Jeg er veldig glad i asiatiske smaker, og her kommer en oppskrift på fiskekaker smaksatt med krydder fra det thailandske kjøkkenet. Disse fiskekakene er lette i konsistens og proppfulle av gode smaker. Asiatiske fiskekaker passer godt sammen med en frisk asiatisk salat med mango, agurk og rødløk, eller denne salaten med gulrot og squash .

Det er viktig å bruke fersk fisk, for når fisken er blitt fryst ned og så tint opp mister den mye av bindeevnen. I tillegg har jeg brukt et egg i denne oppskriften. Det bidrar også til å holde fiskekakene sammen.

Ingredienser

  • 300 gr laksefilet
  • 300 gr torskefilet
  • 1 egg
  • 1 fedd hvitløk, revet
  • 2 ts ingefær, revet
  • 1 chili, finhakket
  • 2 vårløk, finhakket
  • 1 håndfull koriander
  • 1 lime, saften 1 ts sesamolje
  • 3 ts fiskesaus
  • nykvernet pepper
  • --
  • 1  liten mango
  • 1/2 slangeagurk
  • 1/4 rødløk
  • koriander
  • 1 lime saften
  • --
  • 3 ss sweet chili saus
  • 1 ss soyasaus
  • saften fra 1/2 lime
  • 1 ss fiskesaus

Fremgangsmåte

  • Skjær fiskefileten i grove terninger og ha alle ingrediensene i en matmølle. Kjør det til en grov masse.
  • Varm olje i en stekepanne. Form små kaker ca. 5 cm og stek dem pent gyllene på begge sider.
  • Lag salaten. Skjær mango og agurk i små terninger og hakk løken. Grovhakk korianderen. Bland alle ingrediensene.
  • Bland sammen alle ingrediensene til sausen.
