REKLAME – Banh mi er herlige vietnamesiske baguetter. De har da ikke baguetter i Vietnam, eller Sørøst-Asia tenker du kanskje? Men joda. De franske imperialistene kunne nok ikke leve uten den lange loffen sin, og når de dro ble loffen igjen. Derfor er baguetter nå en vanlig del av det vietnamesiske kjøkkenet, om enn kanskje ikke helt på den måten franskmennene brukte den.

Den varianten jeg har laget er vegetarisk, men det er vel så vanlig å fylle baguettene med svinekjøtt eller herlige, krydrede kjøttboller. Egentlig er det bare fantasien som setter grenser for hva de kan fylles med, men de syltede grønnsakene er nok en forutsetning for at det skal kunne kalles banh mi.

Disse banh mi er herlige små smørbrød med den sprø loffeskorpen, syrlige, syltede grønnsaker, litt hot majones og marinert tofu. Etter min mening er baguetten helt avgjørende for at resultatet skal bli bra. Noen mener at baguetten skal være myk slik at det blir lett å spise, men det er jeg ikke enig i. Jeg synes den skal ha en knasende sprø skorpe og selvfølgelig gjerne være nystekt.

Selv om dette for så vidt er enkle smørbrød å lage, krever det litt forarbeid. De syltede grønnsakene kan gjerne lages god tid i forveien. De holder seg flere dager i kjøleskapet. Har du en mandolin som kan lage julienne eller en såkalt spiralizer er jo jobben grei, ellers må du til med kniv og skjære opp grønnsakene for hånd. I oppskriften nedenfor er det en klassisk blanding av gulrot og rettish, men det er ingen ting i veien for å tilsette andre grønnsaker også som f.eks agurk eller rødløk vil passe godt. Nedenfor har jeg skrevet inn en oppskrift på hjemmelaget majones, men det går helt fint å bruke kjøpemajones som så smakes til med limesaft og shriracha.

  • 2 fedd revet hvitlølk

  • 1,5 dl rapsolje
  • 1/2 ts dijon sennep
  • 1/2 ts hvitvinseddik

  • saften fra 1 lime

  • Til servering
  • Koriander

Fremgangsmåte

  • Begynn med å lage de syltede grønnsakene. Skjær gulrøtter og rettish i fyrstikkstore biter.
  • Kok opp vann, sukker, salt og eddik. La det koke til sukker og salt er helt løst opp.
  • Ha grønnsakene og evt. en chili skåret i skiver i et helt rent Norgesglass. Hell over den kokende laken og sett lokket på. Det bør stå minst en time, men kan gjerne lages dagen i forveien.
  • Lag så majonesen ved å piske eggeplomme, sennep, eddik og salt sammen til eggeplommen har blitt seig.
  • Tilsett så oljen først dråpevis under kontinuerlig pisking. Etter hvert kan oljen tilsettes i en tynn stråle mens det fortsatt piskes. Smak majonesen til med limesaften og shriracha.
  • Rør sammen marinaden til tofuen.
  • Skjær tofuen i skiver og pensle med marinaden. La den ligge i ca. 15 minutter. Stek tofuen i en slipp-lett stekepanne på middels varme.
  • Skjær baguettene i passelige biter (ca. 15 cm lange) og del bitene på langs. Smør majones på den ene halvdelen. Legg på syltede grønnsaker, stekt tofu, koriander, agurk og rødløk. Legg sammen og server.
