Hjemme hos oss er det en tradisjon at jeg lager biscotti til jul. Hva slags smak disse småkakene får kan variere fra år til år. I år har jeg gått for biscotti med julesmak og sjokolade. Disse kjeksene har fått en deilig smak av nellik, ingefær og kanel, og det er en blanding som virkelig smaker av jul.

Biscotti er lett å lage og lett å like. Jeg synes de smaker nydelig med en kopp te eller kaffe. De passer også veldig godt å servere ved siden av søt vin som italiensk vin santo eller portvin.

Det flotte med biscotti er at det er lett å variere smak ved å tilsette forskjellige nøtter, krydder eller tørket frukt. På bloggen finner du flere oppskrifter på forskjellige biscotti. Det er en variant med sjokolade og appelsin. Denne er uten melk for de som trenger å tenke på det. Det er også en oppskrift med pistasjenøtter og appelsinblomstvann, som jeg lagde i forbindelse med cook for Syria i fjor.

Ingredienser

  • 70 gr mandler
  • 50 gr mørk sjokolade
  • 100 gr romtemperert smør
  • 1,5 dl sukker
  • 2 ts vaniljesukker
  • 1 egg
  • 4 dl hvetemel
  • 1 ts bakepulver
  • 1 ts kanel
  • 1/2 ts malt nellik
  • 1/2 ts malt ingefær

Fremgangsmåte

  • Forvarm ovnen til 200 grader.
  • Hakk nøttene og sjokoladen grovt.
  • Pisk smør, sukker og vaniljesukker hvitt og luftig.
  • Rør inn egget.  Rør til det er blandet og tilsett mel, krydder og bakepulver. Bland alt godt.
  • Deigen skal ikke være for tørr. Er den klissetet tilsettes litt mer hvetemel.
  • Bland til slutt inn de hakkede mandlene og sjokoladen.
  • Del deigen i fire emner og rull ut til pølser som er like lange som et stekebrett. Trykk pølsene litt flate. Sørg for at det er litt avstand mellom deigpølsene, for deigen vil flyte litt utover. Stek brødene midt i ovnen i 20 minutter.
  • Ta dem ut og skru temperaturen ned til 50 grader.
  • Mens de fortsatt er litt varme skjær brødene i skiver på skrå.
  • Legg kjeksene tilbake på stekebrettet, og la dem tørke til de har blitt sprø. Det tar en drøy halvtime.
