Noen ivrige lesere har kanskje fått med seg at det i høst har vært forskjellige utfordringer blant matbloggere. Det var Mia i Green Bonanza som satte i gang dette. Først var det en utfordring om å bruke beter. Dette var litt utenfor min komfortsone, men jeg greide da å få laget to gode og fargerike retter med beter. Neste måned var det Ina i Mat på bordet som bestemte at utfordringen skulle dreie seg om poteter. Mange var med og mitt bidrag var gnocchi. Denne gangen er det Vidar fra bloggen Et kjøkken som har tatt initiativet til utfordringen og denne gangen dreier det seg om mat fra Syria. Engelske kokker har dratt i gang en innsamling til barn i Syria under mottoet #cookforSYRIA.

Ideen var vel egentlig å vise frem mat fra Syria, men dessverre kjenner jeg ikke til dette kjøkkenet i det hele tatt. Derfor kommer det ikke en syrisk rett fra meg,  men jeg har latt meg inspirere av ingredienser jeg forbinder med det området av verden. Jeg har brukt appelsinblomstvann og nøtter og laget biscotti smakssatt med disse ingrediensene.  Resultatet ble herlige sprø bisti cotmed en svakt parfymert smak fra appelsinblomstvannet og litt krønsj fra nøttene. Kjeksene passer ypperlig sammen med en kopp te eller kaffe og det er en herlig litt barnslik følelse å sitte der med disse små kjeksene og dyppe oppi den varme drikken slik at de blir myke og tar til seg smaken fra drikken også. Det går selvsagt an å dyppe biscottiene i vin santo eller annen søt vin slik italienerne gjør, men det er kanskje ikke helt autentisk da de fleste syrere er muslimer og dermed ikke drikker vin.

Biscotti med pistasjenøtter og appelsinblomst-vann

Ingredienser

  • 50 gr salte pistasjenøtter uten skall
  • 100 gr romtemperert smør
  • 1,5 dl sukker
  • 2 ts vaniljesukker
  • 1 egg
  • 2 ss appelsinblomstvann
  • 4 dl hvetemel
  • 1 ts bakepulver

Fremgangsmåte

  • Forvarm ovnen til 200 grader.
  • Hakk nøttene grovt.
  • Pisk smør, sukker og vaniljesukker hvitt og luftig.
  • Rør inn egget og tilsett appelsinblomstvannet. Rør til det er blandet og tilsett melet. Bland alt godt.
  • Deigen skal ikke være for tørr. Er den klissetet tilsettes litt mer hvetemel.
  • Bland til slutt inn de hakkede pistasjenøttene.
  • Del deigen i fire emner og rull ut til pølser som er like lange som et stekebrett. Trykk pølsene litt flate. Sørg for at det er litt avstand mellom deigpølsene, for deigen vil flyte litt utover. Stek brødene midt i ovnen i 15 minutter.
  • Ta dem ut og skru temperaturen ned til 50 grader.
  • Mens de fortsatt er litt varme skjær brødene i skiver på skrå.
  • Legg kjeksene tilbake på stekebrettet, og la dem tørke til de har blitt sprø. Det tar en drøy halvtime.
