Da Lillemor var liten, tålte hun ikke melk. Og da snakker jeg ikke om laktoseintoleranse, men hard-core reaksjon på melkeproteinet. Familien hadde derfor et helt melkefritt kosthold i flere år. Det vil si alle middager og fellesmåltider var melkefrie, men vi andre spiste ost, yoghurt og brukte andre melkeprodukter når Lillemor ikke skulle ha. Det ble selvsagt en god del finlesing av varedeklarasjoner – særlig i begynnelsen, men ettersom vi vente oss til dette og visste hvilke produkter som var trygge, gikk det lettere å lettere. Etter noen år tålte hun melk igjen, og vi glemte nesten helt at det en gang var et problem. MEN, så dukket det plutselig opp igjen, og jeg er nå tilbake til å lese varedeklarasjoner og finne ut hva vi kan spise sammen som familie.

Lillemor er som de fleste barn veldig glad i søtsaker, og plutselig var det en hel del som var utenfor rekkevidde. Jeg bestemte meg derfor for å lage noen kjeks som vi kan ha på lur. At jeg liker biscotti veldig godt, er nok en grunn til at jeg valgte å lage akkurat disse. Jeg hadde tenkt å ha sjokolade i dem, men på min lokale Rema-butikk har de ingen sjokolader som er melkefrie. Så da ble mine biscotti uten sjokolade i denne omgangen, men får du tak i melkefri sjokolade, går det fint å blande inn litt grovhakket sjokolade til slutt sammen med mandlene.

Jeg brukte Smøremyk rapskokos fra Synnøve Finden. Det er en del av sortimentet de har utviklet sammen med Berit Nordstrand. Den eneste grunnen til at jeg valgte dette produktet var at det var det eneste de hadde i butikken. Det er godt mulig at det går fint med Soft Spesial (blå) eller Melange uten melk, men det har jeg ingen erfaring med.

Denne oppskriften er veldig fleksibel og kan varieres på utallige måter. Mandlene kan byttes ut med pistasjnøtter, pinjekjerner, hasselnøtter eller alle andre slags nøtter vil jeg tro. Man kan også tilsette hakket sjokolade eller tørket frukt som for eksempel tranebær, aprikoser eller syltet appelsinskall. Er du ikke like glad i appelsinsmaken som jeg kan appelsinskall tas bort og erstattes med for eksempel vanilje. Her er det med andre ord nesten bare fantasien som setter grenser for hva som kan være i disse deilige kjeksene.

For ordens skyld, dette innlegget er ikke sponset selv om jeg nevner produktnavn. Det gjør jeg fordi det kan være vanskelig å finne gode erstatningsprodukter. Jeg får altså ikke betalt for å bruke disse produktene, og jeg er når det kommer til stykke ikke særlig tilhenger av erstatningsprodukter i sin alminnelighet heller. Men har man av en eller annen grunn behov for det, er det jo flott at det finnes og da gjelder det jo å finne noen som fungerer godt. Personlig så savner jeg smørsmaken i kakene, men både konsistens og smak ble OK, og ikke minst ble Lillemor fornøyd.

Ingredienser

  • 100 gr Smøremyk rapskokos (Synnøve Finden)
  • 1,5 dl sukker
  • 2 ts vaniljesukker
  • 1 egg
  • 2 ss appelsinjuice (eller appelsinlikør)
  • revet skall av 1 appelsin
  • 4 dl hvetemel
  • 1 ts bakepulver
  • 70 gr mandler

Fremgangsmåte

Ca. 50 stk.

  • Sett ovnen på 200 grader.
  • Pisk smøremyk rapskokos, sukker og vaniljesukker sammen til det blir luftig.
  • Tilsett egg, appelsinskall og appelsinjuic/-likør og  bland godt.
  • Ha oppi mel og bakepulver og rør til det er en samlet deig.
  • Grovhakk mandlene og bland inn i deigen.
  • Del deigen i tre like store emner og klem den ut til tre pølser som er like lange som stekebrettet (den korte siden). De skal være 1,5-2 cm høye og kanskje 5 cm brede.
  • Stek i ca. 15-17 minutter. Brødene skal ha fått litt farge, men ikke mye. Ta brettet ut av ovnen og legg kakebrødene over på en rist og la dem avkjøle seg.
  • Skru varmen i ovnen ned på 50 grader.
  • Skjær brødene på skrå i ca. 2 cm tykke skiver. Legg dem tilbake på stekebrettet og la kakene tørke i ovnen i ca. 25 minutter.
  • Avkjøl og legg i kakeboks, eller spis med en gang.
