I helgen koste vi oss med skalldyr. Jeg tok dessverre litt av i fiskedisken og kom hjem med mer mat enn vi kunne spise. Derfor måtte jeg finne på noe godt med rekene dagen etter. Løsningen ble en wok med squash og reker. Dette ble en skikkelig godt og enkel middag (når man ser bort fra at rekene måtte pilles). Resten var gjort på 10-15 minutter.  Har du lyst til å lage dette uten å pille reker, kan du selvsagt kjøpe ferdig pillede reker. Men jeg må si at jeg synes ikke de er like gode som de man piller selv. Det er noe med laken.

Når du skal lage denne, går det fort. Derfor anbefaler jeg deg å kutte opp alt på forhånd, slik at når du først fyrer opp woken er det bare å putte oppi etterhvert. – først squashen så purren og så rekene til slutt. I alt tar denne delen av matlagingen mindre enn 5 minutter.

I denne oppskriften har jeg brukt kinesisk matvin. Dette er noe jeg har kjøpt i en asiatisk butikk. Du trenger altså ikke gå på polet for å få tak i det. Denne vinen gir en skikkelig god smak på alle wokmarinader, så den er vel verdt å kjøpe om du kommer over den. Den heter Cooking wine. Får du ikke tak i, kan du bruke en tørr hvitvin, eller sherry eller kanskje eplejuice med litt eplecidereddik oppi. Det siste blir en litt annen smak, men kan fungere.

Ingredienser

  • 1 kg reker
  • 1 squash
  • 2 purre
  • 1 rød chili
  • 4 fedd hvitløk
  • 2 ss kinesisk matvin
  • 2 ss rapsolje
  • nykvernet pepper
  • 3 ss lys soyasaus
  • 1/2 dl vann

Fremgangsmåte

  • Finhakk chili og hvitløk og bland det med soyasaus, vin, rapsolje og pepper.
  • Pill rekene og legg dem i marinaden.
  • Skjær squash i terninger og purrene i ringer.
  • Varm litt olje i en wok og ha oppi squash og purre.
  • Tilsett vannet og la det steke/dampe til squashen er blitt mør og purren har falt sammen.
  • Tilsett rekene og marinaden og stek til rekene er varme. Pass på å ikke steke for lenge, for da blir rekene tørre og kjedelige.
  • Server med kokt ris eller risnudler ved siden av.
