Åh, herlige sommerdager. Nå er det sol og varme og det har det vært en stund. Det er så herlig!  Nå går det fort mot ferie også, og jeg tipper at det er sånn for mange. Det gode sommerværet har gjort det lett å komme i feriemodus litt før ferien egentlig begynner. Denne uken finner du derfor mange sommerfavoritter på ukemenyen. Det er retter som er lette å lage og spise. Vel bekomme og ha en fin sommeruke!

Etter en lang og varm dag i solen, eller på jobben, kan det være at du ikke har lyst på så mye mat. Da kan jeg friste med gazpacho. Det er en kald grønnsaksuppe fra Spania. Skikkelig leskende og akkurat passe mettende for et lett måltid.  Nå er det sesong for villaks, og hvorfor ikke bake en hel side i ovnen sammen med noen grønnsaker. Stort enklere blir det ikke. Bytt ut ørreten i oppskriften med laks og voila – du har et skikkelig deilig måltid med minimal innsats.

En pastasalat er alltid populært på varme dager, og ukens variant bringer tankene til Middelhavet med sine smaker av aubergine, grillet paprika, tomater og oliven. Potetsalat med agurk og dill, er det perfekte tilbehøret til fisk. Prøv den sammen med grillet makrell, eller en hvilken som helst annen fisk på grillen. Den er frisk og litt annerledes med frisk agurk og yoghurt i stedet for majones og rømme.

Så er det helg. Og hva er vel bedre enn å starte helgen med reker, loff og majones og kanskje litt kald hvitvin eller øl i glasset. Det er faktisk ikke vanskelig å lage majones, og prøv gjerne denne varianten med sitron. Den passer ypperlig til rekene. På lørdag foreslår jeg små grillspyd med deilig krydret svinekjøtt og en peanøttdip ved siden av. Server med masse grønnsaker og dette blir et supert sommermåltid. Avslutt uken med å legge noen deilige kyllinglår på grillen. Følger du fremgangsmåten jeg beskriver, får du saftige lår med sprøtt skinn – nam nam.
