I sommer har det blitt mye fisk av alle slag – stekt, kokt, grillet, syltet og rå. Men en av sommerens favoritter har vært grillet makrell. Jeg må innrømme at grilling av fisk har sittet litt langt inne. Av en eller annen grunn hadde jeg fått det for meg at det var vanskelig å grille fisk. Jeg har gjort det før, men allikevel hadde jeg dette bildet i hodet. Jeg hadde tanker om at fisken bare ville falle fra hverandre, at det var nødvendig med ekstrautstyr som fiskerist for å få et godt resultat. Det er feil! I hvert fall dersom fisken er hel, dvs. har skinnet på seg. Hel grillet makrell viste seg å være kjempeenkelt å lag og du verden så godt. Skinnet blir mye sprøere enn når fisken stekes i pannen og kjøttet blir saftig og velsmakende av urtene jeg har dyttet inni buken. Og en aldri så liten bonus er det selvsagt at det ikke blir noe lukt i huset.

Det var en artikkel i magasinet D2 som satte meg på ideen. Riktignok var det ikke makrell det dreide seg om i den artikkelen, men det er jo nettopp det som er så flott med matstoff i aviser og magasiner, Man kan lese om en ting og bli inspirert til å prøve det men på sin egen måte. Så altså, hele grillede makreller. Liker du stekt makrell, liker du garantert enda bedre grillet makrell. På denne måten kan man selvsagt også grille makrellen i fjæra før man kommer hjem. Snakk om blodfersk fisk.

  • 4 makreller
  • salt og pepper
  • gressløk
  • bredbladet persille
  • olje til pensling

Fremgangsmåte

  • Skjær hodet av fisken og sprett opp buken og ta ut innvollene. Skyll fisken godt og klapp den tørr.
  • Skjær 3-4 små snitt på skrå i skinnet på hver side av fiskene.
  • Dryss salt og pepper inn i buken på fiskene og stapp inn så mye urter du får plass til.
  • Surr en hyssing rundt hver fisk slik at urtene holder seg på plass under grillingen.
  • Pensle fiskene med olje og legg på varm grill.
  • La fiskene ligge i fred (ikke snu dem) før de er stekt halvveis gjennom - opp til benet.
  • Snu og grill på den andre siden til kjøttet også her er blitt hvitt og ugjennomsiktig.

Server straks med det du måtte like av tilbehør. Mange sverger til agurksalat, rømme og kokte nypoteter. En frisk blandet salat er et godt alternativ.
