En av mine favorittmatbloggere er Clotilde Dussoulier som har bloggen Chocolate&Zucchini. For et par år siden ga hun ut kokeboken «the French Market Cookbook». Den er full av inspirerende vegetariske oppskrifter basert på hva som er tilgjengelig i de forskjellige årstidene. Fra sommerseksjonen har jeg plukket opp denne tomatpaien.

En for meg litt uvant kombinasjon av tomat og sennep gjør denne paien litt ekstra spennende. Med en grønn salat ved siden av er den et måltid i seg selv, men den passer også fint inn på et koldtbord. Paideigen lages med olivenolje og er veldig lett å arbeide med sammenlignet med vanlig paideig laget med smør.

Ingredienser

  • 60 ml olivenolje
  • 260 gr hvetemel
  • 1 ts salt
  • 1 ss sesamfrø
  • 1 stort egg, hvite og plomme skilt
  • 60 ml kaldt vann
  • 800 gr plommetomater
  • salt
  • 1 stor rødløk, eller 2 små
  • 2 ss sennep
  • 1 eggeplomme + resten av eggehviten
  • timian
  • nykvernet pepper

Fremgangsmåte

  • Begynn med å lage deigen. Den kan lages god tid i forveien.
  • Olje en paiform (ca. 28 cm).
  • Bland alle de tørre ingrediensene i en bolle. Tilsett olje, egg og vann og rør det sammen. Hell deigen ut på benken og kna den  til den henger sammen til en ball. Juster med mer vann eller mel og deigen virker for tørr eller for våt.
  • Mel benken lett og kjevle deigen ut til den er stor nok til å dekke paiformen.
  • Flytt over i paiformen og klem deigen godt ned i formen. Skjær bort overflødig deig.
  • Dekk paiformen med plastfolie og sett den i kjøleskapet i minst 30 minutter. Den kan stå over natten om ønskelig.
  • Prikk deigen med en gaffel og pensle med eggehvite. Stek deigen i 30 minutter på 160 grader.
  • Mens paien forstekes gjøres fyllet klart. Del tomatene i 2 og ta ut kjernene. Dryss snittsiden med litt salt og legg tomatene med snittsiden ned i et dørslag for å renne av.
  • Skjær løken i tynne ringer og stek med litt olje og 1/4 ts salt på middels varme til den blir myk og faller sammen uten å ta farge. Dette tar 10-15 minutter.
  • Sett til side og la det avkjøle seg litt.
  • Bland sammen eggplommen, resten av eggehviten og sennep og rør det inn i løkblandingen.
  • Fordel løkblandingen ut over paideigen og dryss over litt frisk timian. Legg tomatene oppå løkblandingen med snittsiden ned.
  • Stek på 160 grader i ca. 45 minutter. Da skal tomatene være gjennomstekte. Kvern over sort pepper og dryss mer frisk timian over.

Server med en grønn salat. Vel bekomme.
