Jeg studerte i Danmark i mange år. Det har naturligvis satt sitt preg på mine matvaner. Det er mange retter derfra som står på middagsbordet fortsatt. Selv om jeg var student spiste jeg alltid godt. Vi var en hel gjeng med studenter som byttet på å lage middag til hverandre. Det ga et variert kosthold og mye spennende mat.

Svinekjøtt var (og er fortsatt, formoder jeg) usedvanlig populært og billig. Derfor var det ikke uvanlig å bruke svinefilet når jeg skulle lage middag. En rett som av og til sto på menyen når jeg skulle lage noe godt var svinebiff med fløtesaus. Kjøttet surres i fløten. Denne tilberedelsesmetoden er en fin måte å unngå at kjøttet blir tørt på, samtidig som det gir god smak til sausen.  For å oppgradere retten litt bruker jeg friske urter. Denne gangen ble det estragon som passer ypperlig til svinekjøtt.

Ingredienser

  • 600 gr. indrefilet av svin
  • smør/olje til steking
  • salt og pepper
  • 1 stor løk
  • 2 fedd hvitløk
  • 1 dl hvitvin
  • 2 dl kremfløte
  • 1 ss soyasaus
  • 1 ts dijonsennep
  • frisk estragon

Fremgangsmåte

  • Skjær fileten i tykke biffer og krydre med salt og pepper.
  • Brun biffene på begge sider i en stekepanne.
  • Ta dem ut av pannen og brun løken. Ta ut løken og kok ut pannen med hvitvinen.
  • Hell på fløten og smak til med soyasausen og sennepen.
  • Legg biffene og løk tilbake og legg lokk på pannen. Skru varmen ned til lav varme og la det trekke i ca. 15 minutter.
  • Rett før servering drysses rikelig med finhakket estragon over.

Server med kokt ris og dampet nykål. Vel bekomme.
