Lag skagenrøre til koldtbordet eller julefrokosten. Det er en særdeles velsmakende og lettlaget rett med nok wow-faktor til at den fortjener en plass midt på bordet. Den er også super som forrett servert på en stykke ristet loff med et salatblad under.

Min versjon av skagenrøre føles kanskje litt lettere enn mange andre fordi jeg bruker mer creme fraiche og mindre majones. Dessuten tilsetter jeg både sitron og litt revet sitronskall for ytterligere å lette inntrykket. Resultatet av disse justeringene er at dressingen blir litt tynnere enn om det er mest majones. Men jeg synes dette mer enn oppveies av en litt friskere smak.

Som med nesten all mulig annen mat er det kvaliteten på råvarene som avgjør kvaliteten på det ferdige resultatet. Derfor bruker jeg reker med skall som jeg piller selv. Det synes jeg blir aller best. Jeg er nemlig ikke så glad i reker fra en plastboks med lake. Men ønsker du heller å bruke ferdig pillede reker, enten på lake eller frosne, går det også selvsagt fint. Også blant ferdig pillede reker finnes det forskjellige kvaliteter. Velg den beste du kan kjøpe. Det er mitt råd. Dette er tross alt festmat.

Ingredienser

  • 1 kg reker med skall
  • 3 ss creme fraiche
  • 3 ts majones
  • revet skall fra 1/2 sitron
  • 2 ss sitronsaft
  • 2 ss finhakket sjalottløk
  • nykvernet pepper
  • finhakket dill
  • 1 boks lodderogn
  • 1 baguette

Fremgangsmåte

  • Sett ovnen på 200 grader.
  • Skjær baguetten i tynne skiver og rist skivene i ovnen.
  • Pill rekene.
  • Bland sammen alle ingrediensene.
  • Smak til og juster evt. med mer sitronsaft, creme fraiche eller majones.
  • Fordel røren på baguettskivene og pynt med dill og sitron og gjerne litt ekstra lodderogn.

Tips

Mange liker å bruke krepsehaler i røren også. Ønsker du å gjøre det kan du bytte ut halvparten av rekene med samme mengde krepsehaler.
