Hvem liker ikke å kose seg med litt ost og kanskje et lite glass portvin også? Det gjør i hvert fall jeg, og da passer ost og fikenmarmelade sammen som hånd i hanske. Sammen med en moden brie eller en god blåmuggost er denne marmeladen en helt himmelsk kombinasjonen.  Fiken er i seg selv veldig søt og når det kokes sammen med sukker kan det fort bli litt vel søtt for min smak. Derfor har jeg laget en fikenmarmelade med sitron og stjerneanis der sitrus og krydder bidrar til at den oppleves litt friskere. Men den har definitivt fortsatt all den sødmen den trenger for å hamle opp med osten.

Har du lyst til å lage kjeks å servere ved siden av osten, kan jeg anbefale disse havsalt og rosmarinkjeksene. Sitter du med et større lager pepperkaker er det også veldig godt å ha til marmeladen og osten.

Ingredienser

  • 250 gr tørkede fiken
  • 1,5 dl bløtevann
  • 0,5 sitron, saften
  • 1,5 dl sukker
  • 3 stjerneanis
  • 3 ss appelsinjuice

Fremgangsmåte

  • Finhakk fikenene.
  • Legg fikenene i en bolle og hell over vann så det dekker.
  • La det stå i ca. 1 time
  • Ha 1,5 dl av bløtevannet sammen med resten av ingrediensene i en gryte og kok opp.
  • Mens marmeladen koker, steriliseres 2 små glass ved å koke dem i 10 minutter.
  • La det småkoke i 1 time, til væsken har kokt nesten inn og konsistensen er tykk og grøtete.
  • Rør inn appelsinjuicen og la det koke i 2 min til før det helles på sterile glass.
  • Avkjøl og oppbevar mørkt og kjølig.
